About the Role Spiegelworld is looking for an experienced Restaurant Assistant General Manager (AGM) to join the team at Superfrico at the Cosmopolitan in Las Vegas. The AGM will participate in, influence and contribute to all areas of Spiegelworld’s BEAF (Beverage, Entertainment, Art & Food) experience. The AGM is responsible for the day-to-day operations of the outlet including, but not limited to, employee relations and developing and implementing objectives in accordance with budgetary and service requirements. This position reports directly to the Restaurant General Manager, and the pay is $75,000/year.

What You’ll Do

Work closely with Spiegelworld and resort partners to ensure an expertly coordinated launch of the restaurant.

Coordinate SOPs for the front of house and back of house activities to ensure all standards are met and train staff appropriately.

Oversee all F&B operations for restaurant and theater, ensuring an integrated experience.

Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.

Create a work environment which promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction.

Be visible in the restaurant operation, actively participating in service and daily operations.

Maintain high levels of customer satisfaction by building relationships with guests and encouraging staff to do the same; resolve complaints using appropriate service recovery tools.

Use tools such as UD and Avero to analyze business trends and employee performance.

Oversee the restaurant’s beverage revenue including cost, ordering, inventory, and expenses.

Mentor Mixologists in beverage operations and lead cocktail development initiatives.

Oversee the implementation of operational systems in collaboration with bar prep lead, GM and FB Mgr.

Lead strategic beverage training for all bartenders with a focus on consistency, employee engagement and retention.

Hold bi-weekly meetings with The Executive of Beverage to align with seasonal cocktail menu changes and SOPs.

Participate in marketing activities with the General Manager and Marketing.

Develop ideas to maximize revenue and/or reduce expenses, outlining goals and objectives.

Select, train, evaluate, lead, motivate, and coach all employees to ensure that established cultural and core standards are met.

Develop employees’ Food & Beverage knowledge and conduct regular education sessions for staff on product and service.

Manage and maintain CGS inventory and ensure resources for efficient operation are in place.

Perform pre- and post-service checks and communicate daily specials, promotions, and VIP guest plans.

Assist in sales and marketing activities and stay informed of F&B trends.

Other duties as assigned by your manager.

All duties are performed in accordance with Spiegelworld policies, practices, and procedures.

What You Bring

Minimum of 5 years of experience in restaurants with at least 3 years in restaurant management. A bachelor’s degree in hospitality or hotel/restaurant management is desirable.

Wealth of food and beverage experience in large restaurants and proven experience as a manager.

Well-developed interest in food and beverage, with the ability to remember ingredients and dishes to inform customers and staff.

Hands-on experience with restaurant management software (OpenTable, Resy, SevenRooms).

Proven people management, motivation, and development skills; experience managing union staff is a plus.

Preferred experience opening a restaurant or bar, including training and setting standards and creating SOPs for front and back of house.

Passion for delivering the highest standards consistently with the guest at the center of the experience.

Strong problem-solving skills and ability to work in a dynamic, creative environment.

Excellent communication, financial acumen, and business management abilities.

Successful reference checks, background check & drug test clearance prior to hire.

Ability to work evenings, weekends, and holidays as scheduled/needed.

Must have valid work authorization for the US.

Able to type on a keyboard and work on a computer for extended periods of time.
