THE JOB: As a Senior Executive Chef at Scarpetta, you lead all kitchen operations, providing direction and mentorship to the Sous Chef, Assistant Chef, and culinary team in alignment with the MGM brand. You drive operational and financial goals, oversee recipes, inventory, supplies, and cost controls, manage staff performance, scheduling, and training, execute property F&B initiatives, maintain facilities to MGM standards, and ensure exceptional guest experiences while following company policies and procedures.
THE DAY-TO-DAY: Lead and oversee daily commissary kitchen operations, including budgets, labor, scheduling, inventory, guest service standards, and menu strategies for profitability. Represent the kitchens in divisional, property, and corporate meetings.
Implement policies, procedures, pricing, training programs, and company-wide F&B initiatives. Ensure top standards of health, sanitation, and cleanliness, and complete all compliance training.
Manage HR functions, including hiring, training, coaching, recognition, diversity initiatives, legal compliance, and collective bargaining agreements.
Ensure guest satisfaction and product quality by reviewing orders daily, addressing feedback, and collaborating with leadership to meet timing, recipe, and quality standards.
Maintain strong knowledge of all menu items, F&B products, and kitchen equipment.
THE IDEAL CANDIDATE: 2+ years of experience in culinary or kitchen management
Previous experience working in a banquet kitchen or high-volume restaurant or previous experience in a luxury or fine-dining restaurant
Complete knowledge of health and safety regulations
