Job Description Summary:

The Sushi Chef II position is a highly trained and experienced role. You will be a master of knife skills, fundamentals of rolling sushi, and food safety. Responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and maintaining a clean and safe work environment. To be successful, you should ensure all ingredients used in dishes are of the highest quality. Minimize waste and costs through proper utilization of resources and proper handling of food and equipment. Lead by example at the sushi bar, ensuring preparation, smooth operations, and excellent customer service while engaging customers. Key Competencies

Expert in cutting, slicing and filleting different types of fish and vegetables Adhere to training guide/manual specs, creating rolls per kiosk guidelines Prepare various sushi dishes according to established guidelines for quality, portion size, presentation, and food safety Maintain a clean work environment to prevent contamination Report any problems with kitchen equipment to the manager on duty Sterilize all utensils, instruments, and equipment before use Uphold a clean work environment to prevent contamination Understand food waste and costs and how they impact kiosk goals Inspect quality of fruits, vegetables, and fish and inform supervisor if quality is sub-standard Greet and communicate with customers to ensure they feel valued Qualifications Minimum of two years in the food service industry; sushi rolling experience required Ability to read, write, and communicate in English Excellent knife skills with experience in cutting large fish for sashimi and nigiri and prepping vegetables for common sushi rolls Valid food handler’s license with knowledge of food safety regulations Ability to stand for long periods Ability to work under pressure with sound judgment Aligned with the company mission and core values Professional conduct in front of customers and respectful interaction with co-workers Additional Information Hana Group North America is an Equal Opportunity Employer Salary: $17.50-$20.00 USD hourly
