Overview

The San Diego Healthcare System is recruiting a Food Service Worker (Ingredient Control) to support Nutrition and Food Services operations. This role focuses on accurate receipt, inventory, and distribution of food and non‑food supplies, food safety compliance, and collaboration with kitchen staff to maintain smooth production operations. Responsibilities

Receive and inspect food and supply items delivered by vendors, check quantity and quality, and report discrepancies to supervisor. Maintain inventory, check condition of perishable items, store items correctly, and rotate stock using FIFO to prevent spoilage. Keep accurate records related to the receipt and distribution of food items and non‑food supplies. Screen and identify shipping and receiving documents for discrepancies. Prepare master order for food and non‑food deliveries; use proper techniques to measure and portion dry, fat, and liquid ingredients when issuing ingredients. Collaborate with production cooks in the ingredient control process to maintain a smooth production operation. Deliver ingredients and/or supplies to preparation and service areas to meet production and service schedules. Routinely prepare subsistence and non‑food supply orders, making adjustments based on existing inventory. Record refrigerator/freezer temperatures per established schedules and report discrepancies to the supervisor. Follow thawing guide to break out frozen food according to menu/census information. Transport frozen perishable items from freezer to appropriate refrigerator, taking out cases or crates in sufficient time for the items to reach the desired thawed condition. Follow strict security guidelines to protect food and non‑food supplies from pilferage. Maintain order in storage areas to ensure easy access, expediting issuances and the inventory process. Enter inventory results into Computrition or similar software. Use a computer terminal to record and retrieve recipe, menu, and inventory data and to produce printouts of such information for various work units in the kitchen. Operate all equipment in the assigned area and maintain it in sanitary condition. Cleans assigned working area and ensures storeroom and storage refrigerators are clean, orderly, and organized. Assure products moving through the system meet Hazard Analysis Critical Control Point (HACCP) or similar accepted methodology. Qualifications

U.S. Citizenship; non‑citizens may only be appointed when it is not possible to recruit qualified citizens in accordance with VA Policy. Suitable for Federal employment, determined by a background investigation.
