Overview
Head Sommelier needed for Zuma Vail opening team. You will curate and manage the wine program to enhance the dining experience, using your expertise in wine and sake selection and service to elevate the beverage program and support the restaurant's success.
Base pay range $20.00/hr - $20.00/hr
Main Duties
Manage the wine team, providing training and support to foster development and wine knowledge
Maintain and develop an extensive and diverse wine/sake list that complements the cuisine and reflects Zuma’s standards
Conduct regular tastings and evaluations of new and existing wines to assess quality, value, and suitability for the wine list
Conduct weekly inventory assessments to ensure accurate stock levels
Collaborate with the culinary team to develop wine pairings and guidance to guests, to enhance dining experiences and promote sales of wine, sake, and other beverages
Oversee wine service standards and procedures, ensuring proper storage, handling, and service to preserve quality; train and coach staff as needed
Conduct wine training and education sessions for staff on grape varietals, production methods, tasting techniques, and service etiquette
Support overall restaurant operations by assisting with floor responsibilities
What We Look For Our ideal candidate embodies our values and the following:
A genuine love for culinary experiences and a passion for Japanese cuisine
Proven experience as Head Sommelier or in a similar role in a luxury high-volume restaurant
Certified WSET 2 or higher preferred but not essential
Solid knowledge of sake or interest to learn
Experience as a Head Sommelier in a fine dining or upscale establishment
Ability to work flexible hours, including evenings, weekends, and holidays
Strong teamwork and collaboration with a large staff
Customer-oriented with the ability to create memorable dining experiences
