Position Overview The Theatre Manager for our F&B operations is responsible for overseeing nightly operations of all F&B including quality control, managing nightly service staff, and creating/implementing policy for F&B procedures with a goal of gaining efficiencies. The role also manages POS systems, updates menus and staff changes, identifies and corrects tech issues, and maintains COGS to ensure we’re operating effectively and efficiently.
This is a full-time, exempt position reporting to the GM. Benefits include medical, dental, vision, 401(k) with employer match, PTO, parking, and free shows.
Direct Report: General Manager
Responsibilities
Scheduling of FOH staff
Oversee the LBW program
Maintain a positive relationship with all employees, cast, and crew
Keep COGS at or under the correct percentages, including monitoring the inventory system, ordering and organization of product, and quality and security of storage spaces
Maintain labor at or under specific percentages based on the yearly budget
Ensure staff uphold local, state, and federal laws and codes for F&B service, including preventing overservice, ensuring correct certifications, and maintaining food sanitation and liquor law compliance
Have a full understanding of storage areas, bars, theaters, kitchens, and spaces to recommend procedural changes
Communicate with Audience Services Manager & Special Events Team regarding special circumstances and needs (pre-shift, nightly operations, and customer service)
Oversee nightly closing procedures (proper cash collection, verifying punch‑in/out, handling disciplinary issues)
Work with Security team as needed
Vendor management
Implement and oversee incentives and sales contests
Requirements
Minimum 2 years experience in the F&B industry
Must have bar experience, including general bar knowledge
Must have the following certifications:
Allergen Certification
Basset Certification
Food Handler Manager Certification
Chicago certification
Must have experience/knowledge in food service, including general kitchen knowledge
