Requirements and Must‑Haves
Minimum 4 years of culinary leadership in a high‑volume, scratch‑made BBQ or smokehouse environment Proven success managing ordering, labor, scheduling, and kitchen operations Deep understanding of food safety, sanitation, and inspection standards Strong ability to develop and lead teams through communication and accountability Confident working alongside hands‑on ownership that values structure and performance
Preferred Background and Skills
Experience in multi‑unit or structured restaurant groups Mastery of smoking techniques, open‑flame cooking, and Southern BBQ traditions Culinary degree or professional culinary training preferred Calm, organized leadership style with integrity and composure under pressure ServSafe certification or equivalent food safety credential
