Executive Chef – Moat Mountain Brewing Co.

Moat Mountain Brewing Co., a long-standing staple in North Conway, NH, is embarking on an exciting evolution. We are rebranding toward a true gastropub experience — pairing exceptional craft beer with elevated, chef‑driven cuisine — and we’re seeking a hands‑on Executive Chef to lead the culinary vision. This is not just another kitchen leadership position. It's a pivotal role in the next chapter of our company, including our long‑term plan to transition to an Employee Stock Ownership Plan (ESOP). The right candidate will be essential in that journey — and rewarded for it.
Responsibilities
Leadership & Team Development:
Recruit, train, and mentor back‑of‑house staff; foster a culture of collaboration, professionalism, and accountability.
Operational Excellence:
Manage scheduling, labor efficiency, and kitchen workflow; maintain high standards of cleanliness, safety, and compliance.
Financial Management:
Control food costs and drive profitability without compromising quality; work closely with ownership on purchasing, vendor relationships, and forecasting.
Menu Innovation:
Develop seasonal menus, daily specials, and beer‑pairing features; background in smoked meats, BBQ, or live‑fire cooking is a strong plus; embrace local ingredients and modern gastropub trends.
Hands‑On Execution:
Must be fully capable and willing to work the hot line when needed.
Qualifications
Proven success as an Executive Chef, Head Chef, or high‑level Sous Chef in a scratch kitchen environment.
Strong foundation in human resources, team leadership, food costing, and labor management.
Creative but disciplined — able to balance culinary passion with operational performance.
Experience in brewpub, gastropub, or high‑volume independent restaurant settings preferred.
A collaborative mindset with interest in long‑term growth through ESOP participation.
Experience with smoked meats and BBQ programs highly preferred.
