About Us Ferrane Bakery is an artisanal, Scandinavian-inspired bakery and café in the heart of Brooklyn Heights. Our menu celebrates Swedish sandwiches, artisanal breads, and pastries crafted with care, precision, and passion. Since opening in 2025, we’ve become a neighborhood favorite known for our craftsmanship, quality ingredients, and welcoming atmosphere.
Role Summary We’re looking for a Lead Baker to oversee and take ownership of daily bread production within our artisanal but fast-paced kitchen. This is a hands‑on leadership role ideal for an experienced baker who thrives on both craft and organization — balancing production excellence with mentorship, precision, and teamwork in a collaborative environment.
Responsibilities & Expectations
Oversee and participate in all aspects of daily bread production, including mixing, shaping, proofing, and baking
Create and maintain weekly production schedules for the bread department and staff
Manage staff scheduling, ensuring proper coverage for all shifts
Coordinate daily prep lists, baking order, and quality control for consistency and timing
Oversee ingredient inventory, manage ordering, and track usage to minimize waste
Conduct daily quality checks to ensure uniformity in texture, flavor, and bake quality
Maintain clear communication with ownership and the Lead Pastry Cook, including daily updates, shift reports, and production goals
Maintain a clean, safe, and organized work environment, upholding health and sanitation policies
Mentor and train bakers, fostering a positive and growth‑oriented team culture
Identify and communicate opportunities for improvement in workflow, production timing, and ingredient efficiency
Skills & Requirements
Minimum 5+ years of professional bread baking experience (artisan, sourdough, or Swedish-style preferred)
Formal education in baking or culinary arts (preferred, but not required)
Strong understanding of fermentation, proofing, shaping, and bake timing
Proven ability to manage production scheduling, shift leadership, and small‑team coordination
Experience with inventory management, vendor communication, and quality control
Ability to work efficiently in a fast‑paced, physically demanding environment
Comfortable working independently and as part of a team
Availability to work holidays and weekends
Ability to stand for a full shift and lift 50+ lbs as needed
Must be 18 years or older and authorized to work in the U.S.
Familiarity with Swedish-style breads is a plus — but not required
