Lettuce Entertain You Restaurants is hiring a Sous Chef in Nashville, TN for a new late-night taco and drink concept on Broadway. The role requires 2 years of sous chef experience and involves leading BOH operations to support launching a new restaurant concept. Responsibilities
Run BOH shifts and ensure effective and efficient operations including food prep and cooking Maintain adequate inventory levels of food and supplies and supervise the kitchen, dish and all BOH teams Lead BOH pre-shift meetings and participate in line, temp and cooler checks and food tastings for the shift Partner with GM and/or designated managers/chefs to regularly review and maintain recipe books Perform regular line checks to ensure quality of all menu items Purchase and order food product and supplies for the restaurant including daily product orders Assist with tracking and controlling food cost Ensure effective communication between FOH and BOH regarding production, timing, needs, and special requests Partner with the GM and management team to interview, hire, onboard, train, supervise and develop all BOH employees as needed Model and promote teamwork across all teams Use tact and good judgment when addressing challenges with guests, vendors, and employees Work a variety of days and shifts (including early mornings, late nights and weekends) at multiple sites with or without overnight travel Move and lift up to 10 pounds, frequently up to 25 pounds, and occasionally up to 50 pounds Demonstrate 2-3 years of sous chef experience in a full-service restaurant and ability to lead and manage kitchen staff Qualifications
