Arlo Hotels, an independent lifestyle hotel, is seeking a dynamic Sous Chef. The ideal candidate is passionate about people, driven by purpose, and clever in their approach. The Sous Chef is one of the most important jobs in a kitchen, requiring extensive knowledge of all dishes on the menu and the ability to coordinate all culinary teams. Key responsibilities include: Working every station on the line and adhering to the same standards as the line cooks In charge of Department of Health and temperature check lists three times daily Overseeing and driving their work group's production and/or service Interviewing candidates for their work group along with the Executive Sous Chef Evaluating while working with kitchen trails Training of their work group Verifying all employees are properly adhering to timekeeping standards Organizing all prop lists for their work group Maintenance of an Inventory type Monitoring and correcting schedule if overtime is approaching for their workgroup Assisting the chef in biannual employee evaluations in their workgroup Assisting with execution of banquets/events during their service; pastry assistance as needed Reviewing any equipment issues and recording in maintenance log Expedite their workgroup's service Working with the Executive Sous Chef to create new menu items to present to the Executive Chef Monitoring and updating all Department of Health and temperature logs Completing daily walk-through to verify all health department best practices are being followed and all items are to temp Completing daily line checks prior to service to verify all recipes are to standard and all stations are properly stocked with their workgroup Responsible for maintaining an up-to-date Food handlers permit Requirements: 10+ years of cooking experience in a high-volume restaurant or hotel kitchen 2 years of management experience Proficient in the English language (both speaking and writing) Able to lift 50 lbs Able to stay on feet for 8 hours plus Great knife skills in all butchery and knife cuts of any kind Extensive knowledge in all aspects of a professional kitchen Extensive knowledge of the NYC Department of Health's codes and regulations NYC serv safe certificate Salary Range: $65,000 - $75,000/Annually Arlo Hotels is an equal opportunities employer and welcomes applications from all qualified candidates.
