Overview
Ocean Restaurant, the signature dining experience at the Cape Arundel Inn & Resort, is seeking a talented and driven Sous Chef to join our award-winning culinary team. Overlooking the Atlantic and located in the heart of Kennebunkport’s iconic coastal setting, Ocean Restaurant offers an elegant, seasonal menu inspired by French techniques and New England ingredients. As Sous Chef, you’ll play a key leadership role in supporting the Executive Chef, mentoring kitchen staff, and ensuring consistency, creativity, and excellence in every dish. Responsibilities
Assists in the management of culinary personnel including hiring, training, performance reviews, scheduling, coaching, discipline, and termination. Create effective, cost-efficient schedules for the culinary team based on forecast and budget. Conduct daily shift briefings, communicate standards, safety, specials, and guest feedback to staff. Liaise with hotel staff to determine daily room counts, room service requests, events, and special orders. Complete employee performance reviews/evaluations as required. Oversee daily activities such as preparation, sanitation, inventory logging, and food cost reporting. Support Chef/Culinary Director in developing creative, cost-appropriate menu items; assist in recipes and specials. Lead training on execution, timing, and presentation of dishes. Oversee station inventories, food quality, waste control, and proper rotation. Manage inventory, par levels, ordering/receiving, and ensure items are in stock for menus and events; assist in estimating consumption and coding invoices. Coordinate kitchen workflow and expediting for smooth operations. Remain knowledgeable about menu items, features, and promotions; be able to work across multiple culinary stations as needed. Practice proper food sanitation, labeling, rotation, storage, and hygiene; ensure equipment operation and safety. Monitor safety and security procedures; delegate tasks to maintain productivity during shifts. Engage with guests to enhance satisfaction when needed; expedite food with proper timing. Collaborate with management to stay within budget and ensure expenses are coded correctly. Attend scheduled meetings and training sessions; adapt to role requirements and support other departments as needed. About Kennebunkport Resort Collection
