Chef de Cuisine
to join the re-opening of the famed Delano Miami Beach. Set to open its doors in 2025, Delano Miami Beach will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. Ennismore, in partnership with Cain International, are undertaking a significant renovation and redevelopment of the Delano hotel with an aim to open its doors again ahead of the 2025 winter high season. Responsibilities
Lead and manage all kitchen operations, ensuring the highest standards of food quality, consistency, and presentation. Execute and develop offerings in line with established set menus, ensuring alignment with the culinary vision and brand identity of Delano. Take responsibility for authentic Italian culinary techniques and ingredients where appropriate, maintaining the highest standards of quality and presentation. Oversee daily preparation, production, and execution of all dishes in collaboration with the Executive Chef and kitchen staff. Monitor inventory, control food costs, and manage supplier relationships to ensure efficiency and quality. Ensure full compliance with health, safety, hygiene, and sanitation regulations at all times. Recruit, train, mentor, and evaluate culinary team members to build a high-performing and motivated team. Maintain kitchen equipment and ensure all tools and appliances are in proper working order. Collaborate with restaurant management and front-of-house teams to ensure seamless service and guest satisfaction. Continuously seek opportunities to elevate the dining experience and incorporate guest feedback into menu development. Implement and enforce kitchen policies, procedures, and best practices to maintain operational excellence. Analyze kitchen performance metrics and make data-driven decisions to improve productivity and profitability. Foster a culture of creativity, collaboration, and accountability within the kitchen team. Any other reasonable duties as assigned by the supervisor or manager. We recognize we are in the hospitality industry and may provide lateral services. On occasion, team members may be called to perform related tasks to provide exceptional guest service. Qualifications
High school diploma or equivalent required; Culinary Arts degree or relevant Bachelor’s degree strongly preferred. Minimum 5 years of progressive culinary experience, including at least 3 years in a senior kitchen leadership role, preferably in a high-end or luxury dining environment. Deep knowledge of culinary techniques, kitchen operations, menu development, and food safety standards (e.g., HACCP). Strong financial acumen with the ability to manage food cost, labor cost, and inventory control. Proven experience in leading, developing, and motivating diverse kitchen teams in high-pressure environments. Familiarity with modern kitchen equipment and systems, including ordering and inventory software. Excellent verbal and written communication skills in English; ability to communicate effectively across all levels of the organization. Ability to remain calm and organized during high-volume service periods and adapt quickly to dynamic operational needs. Must be able to stand and walk for extended periods—typically 8 to 10-hour shifts. Physically able to bend, reach, lift, carry, push, and pull up to 50 lbs as necessary. Attention to detail, strong organizational skills, and a passion for culinary excellence. Working knowledge of federal, state and local laws governing equal employment opportunity and civil rights, occupational safety and health, wage and hour issues, and labor relations. Additional language ability preferred. All team members must maintain a neat, clean and well-groomed appearance. Specific department uniform guidelines will be explained by your supervisor.
