Reports To:
Chef de Cuisine / Executive Chef
Supervises:
Line Cooks, Stewards
General Purpose:
A Sous Chef is expected to lead and serve as the direct line to the Chef de Cuisine or Executive Chef. The role demands proficiency at every station, detailed knowledge of kitchen operations, and the ability to manage personnel to keep the kitchen running smoothly.
Specific Responsibilities
Owns service period and crew.
Monitors all kitchen activities and manages multiple stations.
Assesses and delegates tasks to line staff, setting clear expectations.
Provides technical assistance on recipe techniques and station prep.
Stays informed of menu changes regardless of service period.
Communicates critical information to line staff upon arrival.
Ensures stewarding staff execute opening, closing, and side‑work duties.
Maintains clean and organized walk‑ins and dry storage areas.
Orders daily and weekly products in coordination with the Chef de Cuisine.
Monitors food and labor costs, implementing controls where appropriate.
Collaborates with the Chef de Cuisine and/or Executive Chef on menu development and engineering.
Qualifications
Minimum of two years experience in a fine dining restaurant environment.
Proficient cooking and knife‑handling skills.
Understanding of safety, sanitation, and food‑handling processes.
Ability to work flexible hours, including nights and weekends.
Responsible, dependable, and punctual.
Excellent communication skills; fluency in English required.
Clean and professional appearance.
Demonstrates enthusiasm for all things 21c.
Must pass a background check.
Travel Requirements:
As needed.
