Overview
Hilton Anatole is seeking a Sous Chef to join the Media Bar and Grill. In this role you will assist the team in planning and overseeing operations while ensuring efficiency alongside the culinary team. Media Grill + Bar is a casual three-meal period restaurant serving contemporary American cuisine, beers, and cocktails. Media Grill + Bar is part of Hilton Anatole, a AAA 4-Diamond property located on 45 acres in Dallas with over 1,600 rooms and 600,000 square feet of banquet space across six food and beverage outlets. Responsibilities
Thrive in a high-volume environment with a passion for culinary excellence and incorporating current trends Train and develop others and build camaraderie amongst teams Possess fine dining experience in various cuisine styles Demonstrate a natural and positive approach to hospitality leadership, with minimum 2-3 years' experience in Lead Cook or higher Assist the Executive Chef in the direction and oversight of all culinary operations, including preparation and production of hotel meals, food quality and presentation, compliance with safety and sanitation standards, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage, as needed Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards Assist in monitoring and developing team member performance, including supervision, counseling, evaluations, training, scheduling and assigning work, and delivering recognition and rewards Benefits
