Has been responsible for the wine & beverage program in large scale, multi-outlet food and beverage operations Background in free-standing restaurant operations Track record of successfully driving beverage sales Cross-cultural work experience preferred Very good general beverage/mixology knowledge Extensive knowledge of wine products and service Fine-tuned palate and knowledge of worldwide wine history, vintages, and current wine trends Full understanding of the winemaking process Knowledge about beverage history, mixology (cocktails and spirit-free) trends Understanding of sanitation requirements in beverage operations Holder of all relevant certifications required by local law Strong industry network Fluent spoken and written English Job Summary

Take full ownership of the beverage program at the property. Support and guide the food and beverage teams regarding their beverage/wine programs. Work closely on all beverage-related initiatives, guidelines and programs and ensure their implementation. Be a hands-on beverage expert who is actively involved in daily service and engages with colleagues and guests to build strong relationships. Key Responsibilities

Administration: Oversees the preparation and update of departmental operations manuals. Conducts regular divisional communications meetings and ensures that briefings and meetings are effective. Guest Satisfaction: Ensures associates deliver the brand promise and provide exceptional guest service; maintain positive guest and colleague interactions; verify guests receive high-quality beverage/wine service in outlets. Operations: Recommend food and wine pairings; build and retain a team of wine experts, mixologists and bartenders; provide extensive training; analyze new beverage options; manage beverage/wine selection and purchasing; requisition, receive and store beverages; maintain inventory rotation; train restaurants, bars and staff; train potential associates to be virtual sommeliers; update beverage menus; provide guest-focused recommendations and diversify wine pairings; manage wine selections seasonally; review slow-moving items and adjust strategies; manage par stocks; collaborate with restaurant managers to improve wine lists; maintain relationships with wine agents/importers; evaluate market reactions; attend wine fairs to source products; research new wineries/wines. Marketing: Prepare wine promotional plans and events; recommend merchandising tools; support special wine events and yearly marketing plans; monitor market trends and competitiveness; create beverage programs aligned with concept and market; coordinate pricing with finance/purchasing; ensure systems reflect beverage selections; develop supplier relationships and negotiate promotions to control costs; organize wine/beverage lists for guest selection; implement strict beverage transaction controls. Finance: Review pricing levels, cost of sales, and monthly reports; develop pricing strategies; negotiate with suppliers; review wine sales and pouring contracts to optimize service, product and finance. Talent and Culture: Develop F&B associates through training and mentoring; conduct annual performance discussions; implement training programs for sommeliers, servers and bartenders; encourage creativity and recognize contributions.
