Overview
The Executive Sous Chef supports the Executive Chef in overseeing daily culinary operations and leading kitchen teams across multiple dining outlets. This role is key in maintaining exceptional food quality, presentation, and service standards that enhance guest satisfaction and uphold the property’s culinary reputation. The Executive Sous Chef contributes to financial success by assisting with menu development, cost control, and the execution of business and operational plans. In addition to hands-on leadership in restaurant operations, this position includes administrative and management responsibilities. Qualifications
Extensive sushi experience required Strong understanding of purchasing processes and kitchen equipment maintenance Proven leadership and decision-making abilities Excellent problem-solving and organizational skills Solid financial acumen, including P&L analysis, budgeting, forecasting, and scheduling Comprehensive knowledge of hotel operations as they relate to culinary functions Experience in kitchen management with a hands‑on leadership style Broad understanding of the restaurant and hospitality industry In-depth food knowledge and creativity;
Culinary degree preferred Familiarity with purchasing, inventory control, and compliance with health and safety standards (OSHA, EPA, ADA, CFC, NFPA) Fish Butchery:
Skilled in whole fish breakdown (salmon, tuna, whitefish, hamachi) and sashimi cuts Rolls:
Proficient in preparing traditional maki, specialty rolls (inside‑out, etc.), and nigiri Knife Skills:
Strong vegetable prep techniques (cucumber rolls, shaved daikon, chiffonade, etc.) Asian Cuisine Knowledge: Familiar with Asian marinades, sushi sauces, and poke sauces Skilled in proper sushi rice preparation techniques Seniority level
