Responsibilities
- Collaborate with the Executive Pastry Chef to develop and execute creative and innovative pastry menus that reflect the hotel/restaurant's brand and meet guest expectations.
- Oversee all aspects of pastry production, including preparation, baking, decorating, and presentation, ensuring consistency and adherence to established recipes and standards.
- Lead and mentor the pastry team, providing guidance, training, and feedback to ensure high levels of skill, productivity, and teamwork.
- Coordinate with other kitchen departments to ensure smooth and efficient operation, including communication of menu changes, special requests, and production schedules.
- Assist in managing inventory and ordering supplies, ensuring adequate stock levels and minimizing waste.
- Monitor food quality and presentation, conducting regular tastings and inspections to maintain high standards of excellence.
- Ensure compliance with food safety and sanitation regulations, including proper handling, storage, and labeling of ingredients, as well as cleanliness and maintenance of equipment and work areas.
- Assist in scheduling and labor management, ensuring appropriate staffing levels to meet business needs while controlling labor costs.
- Collaborate with the Executive Pastry Chef on menu development, special events, and promotions, contributing creative ideas and concepts to enhance the guest experience.
- Stay informed about industry trends, new techniques, and ingredient sourcing, and incorporate this knowledge into pastry production and menu development.
Required Experience
- Minimum 3 years experience pastry production, with at least 1-2 years in a supervisory or leadership role.
- Strong knowledge of pastry and baking techniques, including mixing, shaping, and decorating.
- Creative flair and passion for pastry, with a demonstrated ability to develop and execute innovative menu concepts.
- Strong leadership and communication skills, with the ability to motivate and inspire a team.
- Excellent organizational and time-management skills, with the ability to multitask and prioritize in a fast-paced environment.
- Flexibility to work evenings, weekends, and holidays as required.
- Knowledge of food safety and sanitation regulations, and experience implementing and enforcing these standards in a kitchen environment.
- Ability to work evenings, weekends, and holidays.
