Job Description Across Latin America, food is more than a meal. It's an event. It's a celebration that's shared, savored and enjoyed with the finest spirits. Join us in this ritual. We welcome you to Toro, Richard Sandoval's Restaurant and Rum Bar, that features a casually unique upbeat dining experience. Toro will have a small plate menu along with a Suviche (Sushi & Ceviche combination) bar food offering at the restaurant's lively and energetic Rum Bar setting. The beverage experience will include a variety of hand‑muddled cocktails, a collection of Latin wines and a variety of sugarcane spirits that will be expertly chosen by our resident Beverage Manager.
Reporting to the Toro General Manager, responsibilities and essential job functions include but are not limited to the following:
Consistently offer professional, friendly and engaging service
Supervise the F&B Outlet team in all aspects of the department and ensure service standards are followed
Maximize revenues by upselling and following budget guidelines
Handle guest concerns, reacting quickly and professionally
Balance operational and colleague needs
Have full knowledge of all menus and promotions
Ensure colleagues have full knowledge of all menu items, garnishes, contents and preparation methods being served in the Food & Beverage outlet
Follow outlet policies, procedures and service standards
Follow all safety and sanitation policies when handling food and beverage
Other duties as assigned
Daily pre‑shift held for teams to communicate any information pertinent to the outlet and hotel
Understanding and tracking of JD Power surveys for the outlet
Service Related
Collaborate, create and ever evolve overall sequence of service for Toro during meal periods
Monitor industry trends and keep the bar on the forefront of what's "New and Next"
Establish, monitor, audit and accountability of timeliness of service standards
Monitor cost and controls in accordance with Fairmont guidelines with Toro management for food service product used by FOH team
Set dry goods pars and monitor through regular inventory / ordering with Toro management
Establish proper restaurant organization
Drive guest experience through floor presence at tables as a floor supervisor
Qualifications
Previous Food and Beverage leadership experience required
Previous point of sale system experience required
Computer literate in Microsoft Windows applications required
University / College degree in a related discipline preferred
Excellent communication and organizational skills
Strong interpersonal and problem‑solving abilities
Highly responsible & reliable
Ability to work well under pressure in a fast‑paced environment
Ability to work cohesively as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
