Ma·dé is looking for inspired line cooks who are looking to broaden their culinary horizons! Ma·dé is Chef Cedric Vongerichten and Ochi Latjuba’s ‘second-born’ project which opened in April this year. After the success of the Indonesian-French concept, Wayan, the couple turned their attentions to produce an intimate restaurant focused on seasonality, freshness, with a primary emphasis on seafood and vegetables. All this with a dining room and decor inspired by the beaches of Bali.
What we’re looking for:
Energetic, enthusiastic, and ambitious line cooks with a passion for food, and a desire to be a part of a team in our brand-new all-electric kitchen. Individuals must understand that attention to detail, strong habits and a sense of urgency are the most important qualities. Candidates are encouraged to have garde manger experience, with an interest in fish butchery and cookery. Most of all, we are looking for candidates with a willingness and desire to learn new techniques, play around with new flavors, and deliver best-in-class quality day in and day out.

Requirements and Expectations:
-Experience as a line cook (knife skills are required, but a positive attitude is better)
-Report to work clean, punctual, and according to the schedule
-Daily production of all required mise-en-place, both savory and pastry
-Capacity to learn and follow recipes
-New York City Food Handlers Certificate or willingness to obtain
-Maintaining strong habits of cleanliness and organization
-Deep personal sense of urgency
-Willingness to assist teammates whenever needed
-Possessing a positive and collaborative attitude towards Chefs and Peers
-Ability to spend long hours on your feet, lift and carry 30+ pounds up/down a flight of stairs
-Full time availability, including nights and weekends. Especially nights and weekends.
