Job Summary
:
The Adelbrook Cook is responsible for overall preparation and service of meals served from the main kitchen during the Cook's shift. Orders, receives, and appropriately stores food products and kitchen supplies; cleans/sanitizes storage areas. The cook reports to The Director of Food Services and will accept direction and feedback from the Chief Administrator Officer. This position is non-exempt.
Duties and Responsibilities: Checks the menu at least two days in advance of each meal in order to pull frozen items for thawing in advance of the meal Prepares meals based on day's menu and production sheets. Is responsible for all food production and compliance with all state and Company policies and procedures. Uses standardized recipes and procedures. Ensures all temperature checks are conducted and properly documented Knowledge and understanding of the National School Lunch Program Is responsible for ensuring resident and student meals and snacks are prepared and served safely according to each individualized meal plan Serves meals efficiently and in a timely manner. Serves meals based on published menu, standardized portion sizes or required portion size for diets as prescribed by the medical team and/or dietitian Is knowledgeable and attentive to the dietary needs of the residents and provide for the needs of residents and students on special diets or with food allergies and restrictions Properly puts away all leftovers. Ensures all leftovers are properly labeled and stored Produces all in-house baked goods, including decorated cakes for special events according to specified procedures and menu needs Fills requisitions turned in by units and departments and prepares residents snacks in a timely manner. Expedites weekend breakfast as needed Uses proper sanitation procedures required by the Town Health Department Sweep and mop the kitchen and dining room floor, wash pots and pans, take out garbage Operates various kitchen equipment including, but not limited to oven, flat top, dishwasher, outdoor gas grill and various other food preparation equipment Checks menu and adds food and paper goods to the order sheet needed for the week ahead Check off daily attendance sheet for residents and day students Write out production sheets daily with exact details of amounts and product information per guidelines of The National School Lunch Program Receives incoming food goods and supplies and store them according to specified procedures Supervises and expedite special functions as planned by the Food Service Director Assists the Food Services Director with monthly inventories Expedites the opening/closing of the kitchen to include dining room, sewing line, dish room, storage rooms and kitchen are clean, equipment is turned off, doors are locked, trash is emptied, and lights are turned off Pick up food donations from local stores and put them away Works varied schedule to cover all shifts including weekends and holidays as scheduled by the Director Reports to work appropriately dressed according to company professional dress code Must be able to lift a minimum of 50 lbs. and to bend, stoop, push and lift in order to deliver care and services as needed Performs any other related duties that may be assigned to include special cleaning projects
Education and Experience:
A high school diploma and at least four years' experience as a cook, preferably in a residential or school setting are required. The ability to work as a team member and have a positive attitude in a busy environment are requisite.
Must possess the ability to work independently. ServSafe Certification is required.
