Product Development Scientist / Team Lead This is a full-time on-site role for a Research and Development Specialist at Client company. Expectation is 5 days per week at the facility. The Specialist will be responsible for researching the latest trends and data and applying them to applications that support the new brand. This position will combine the principles and dynamics of Food Product R&D along with culinary competencies to provide a wide scope of support towards the marketing focus and growth of this brand strategy. Position Summary:

Under limited supervision will research, gather data, develop preliminary findings and prepare written reports for the development of new meat products beginning at conception through successful commercialization. Contributes to the creation, maintenance, and review of integrated recipes for new or existing items that include specifications, materials, formulas, equipment, quality and process information for R&D, plant, co-packers and suppliers. Develops project timelines, creates technical proposals, reports and makes recommendations. Execute research to establish specifications and process requirements for processed meat items using knowledge of the properties of both meat products and finished consumer products, namely: An in-depth knowledge of the attributes of fully processed meat products, including coatings, sauces, glazes, seasonings, etc. Knowledge of raw material components, their variability, and synergistic effects on finished products. Knowledge of the relationship between production variability. Knowledge of competitive area for the further process meat category, development and commercialization of meat items, working within and outside of Client company plants, to meet specifications established above. Maintaining a Culinary/R&D lab. Ability to work both independently and collaboratively. Lead new and existing product development initiatives for the retail brands. Formulate products to achieve nutritional profile, ingredient statements and product attributes of the product, knowledge of FSIS labeling and nutritional software. Process product recipe changes and maintain accurate records of change. Build and deliver against product development schedules to meet project timelines. Education and Experience: BS in Food Science or related; 8-10 years’ experience is desired.

Having a dual background in R&D and Culinary is also highly desired. Experience in Product Development of finished protein products is required. Proven ability to handle multiple projects simultaneously and function on a highly collaborative team. Good understanding of food industry standards of quality and food safety, and FDA regulations. Ability to independently manage project work. Demonstrate ability to communicate well and to effectively influence and interact with others to accomplish research goals.
