Scope of Role
The
Tortilla Specialist
plays a critical role in ensuring the consistent production of high-quality tortillas used in Red's All Natural products. This position is responsible for preparing ingredient batches, operating and maintaining tortilla production equipment, performing routine cleaning and inspections, and supporting overall line efficiency. The Tortilla Specialist ensures adherence to food safety standards, product specifications, and production targets, contributing to a safe and smooth-running operation.
Requirements
Mission Critical Competencies Strong attention to detail and commitment to product quality. Ability to follow detailed instructions and standard operating procedures (SOPs). Mechanical aptitude and comfort performing basic equipment maintenance and cleaning. Solid understanding of food safety, GMP, and sanitation standards. Effective communication and teamwork skills to support coordinated production flow. Adaptability and willingness to support various production tasks as needed. Ability to read, write and comprehend information. Basic math skills and ability to follow written and oral instructions. Ability to stand for long periods and perform repetitive hand and arm movements. Ability to lift and carry up to 50 lbs as required. Willingness to work flexible shifts, including overtime and weekends. Key Functional Skills/Knowledge
Prepare and weigh raw ingredients accurately to create consistent tortilla dough batches. Operate tortilla production equipment, including mixers, presses, ovens, and coolers, ensuring proper settings and optimal output. Perform autonomous maintenance and conduct cleaning, inspection, and lubrication (CIL) activities to maintain equipment reliability and prevent breakdowns. Offload and stack finished tortillas efficiently, ensuring product integrity and correct counts. Clear and dispose of line waste promptly and safely to maintain a clean work environment. Conduct regular visual and weight checks to ensure tortillas meet quality and specification standards. Document production data accurately, including batch records, weight measurements, and quality checks. Assist with equipment changeovers, line setups, and sanitation activities as needed. Identify and communicate equipment or process issues to maintenance and supervision promptly. Follow all food safety guidelines, GMP standards, and company policies consistently. Required Knowledge & Experience
High school diploma or equivalent. Experience in weighing and batching ingredients with a focus on accuracy and consistency. Basic mechanical skills and familiarity with routine equipment checks and maintenance tasks. Ability to read and understand production schedules, batch sheets, and equipment manuals. Physical ability to stand for extended periods, lift up to 50 lbs, and perform repetitive tasks Ability to read, write and comprehend information. Preferred
Knowledge & Experience
Prior experience in tortilla or similar bakery product manufacturing. Minimum 1-2 years of experience in a food manufacturing or production environment. Knowledge of HACCP principles and food safety audit requirements. Experience performing CIL (cleaning, inspection, lubrication) in an autonomous maintenance program. Familiarity with automated mixing and pressing equipment. Work Environment
Manufacturing facility with variable temperature zones (hot and cold environments). Exposure to raw and cooked food ingredients; strict PPE compliance required. Standing, bending, and repetitive hand and arm movements throughout shifts (up to 10 hours). Frequent lifting and carrying materials up to 50 lbs.
