Position Summary: The Sanitation Manager has a hands-on role that leads all sanitation activities within the salad processing facility to ensure a safe, clean, and compliant environment for food production. This role is responsible for managing sanitation personnel, developing and maintaining cleaning programs, and ensuring compliance with regulatory, food safety, and company standards. The ideal candidate brings both hands-on expertise in sanitation practices and strong leadership capabilities to drive performance and continuous improvement.
Key Responsibilities: Sanitation Operations & Food Safety Plan, prioritize, and oversee the daily sanitation activities to ensure equipment and facilities are cleaned and sanitized effectively and on schedule. Ensure all sanitation processes meet internal standards and external regulatory requirements (FDA/FSMA, SQF, HACCP, etc.). Supervise Clean-in-Place (CIP) and Clean-Out-of-Place (COP) procedures and ensure proper chemical usage and residue management. Validate and monitor cleaning agents and sanitizers (e.g., peracetic acid, chlorine-based, quats, etc.) for correct concentration, contact time, and compatibility. Interpret and respond to environmental and product microbiological test results (e.g., coliforms, APC). Manage Allergen Control procedures and physical hazard prevention (e.g., metal, glass, plastic). Review and update SSOPs, and OPLs, Effective communication with other departments to ensure timely task completion.
Team Leadership & Training Lead, train, and mentor the sanitation crew, ensuring high performance, safety, and understanding of sanitation Standard Operating Procedures (SSOPs). Conduct hands-on training in chemical safety, PPE use, and cleaning techniques. Understands verification methods (e.g., ATP swabs, microbial swabbing). Foster a culture of accountability, safety, and continuous improvement. Maintain a productive and respectful overnight team dynamic.
Facilities & Equipment Inspect and evaluate the sanitary condition of production lines, equipment, and infrastructure. Ensure hygienic design principles are applied, identifying areas prone to microbial harborage or physical hazard risks. Collaborate with maintenance to address equipment or facility design issues that compromise sanitation or food safety. Oversee sanitation supply inventory and requisition tools, equipment, and materials as needed.
Compliance & Documentation Ensure full compliance with regulatory standards such as the Food Safety Modernization Act (FSMA), USDA regulations, Produce Safety Rule, and GFSI schemes like SQF or BRCGS. Maintain accurate and complete documentation of all sanitation activities, chemical usage logs, verifications, and corrective actions. Lead audit preparation and support third-party and regulatory inspections.
Cross-Functional Collaboration Work closely with QA, Production, and Maintenance to address sanitation-related concerns and ensure smooth production start-ups. Report timely and effectively on any issues that may impact food safety, product quality, or operational readiness.
Minimum Qualifications: High School Diploma or equivalent. Minimum of two (2) years verifiable experience in a sanitation or food processing role with a stable job history and references. Strong organizational skills and attention to detail. Effective communication skills (written and verbal). Strong reasoning and basic mathematical ability. Ability to lift 50 pounds and work in cold (36–38°F), wet, and congested environments. Availability to work third shift (10:00 PM – 8:00 AM).
Desired Qualifications: Experience in sanitation management in a fresh-cut produce or high-care food environment. Working knowledge of pathogens and microbial control in raw produce environments. Experience with SSOP development, implementation, and crew training. Proficiency in sanitation chemistry, environmental monitoring, and allergen/foreign material control. Understanding of hygienic design, airflow, drainage, and facility layout as it relates to sanitation effectiveness. Familiarity with GFSI certification programs and audit preparation. Bilingual communication skills (Spanish-English) strongly preferred. Strong leadership and conflict resolution skills. Data analysis skills to evaluate sanitation verification results and drive improvements.
Work Environment & Physical Requirements: Cold, wet, and fast-paced production setting. Regular exposure to chemicals and need for PPE. Night shift hours with occasional weekend or holiday work.
