Bread Baker Job Description:
The Bread Baker position is responsible for daily sourdough production for Dorothy’s Bakery
and Manufacturing. Prior experience making sourdough bread and an understanding of
sourdough bread fermentation is preferred but not required; understanding of basic bread
production required. Bakery experience required, experience in a high volume setting preferred
but not required. Must be comfortable and confident scaling, mixing and shaping sourdough
bread according to bakery recipes and methods. Must be able to regularly lift 50 lbs, stand for
periods of up to eight (8) hours, and work in a variety of conditions. Schedule is currently
Monday-Friday beginning at 7AM, though this is subject to change in the future depending on
bakery/storefront production/bread needs. This is a full time position; 35-40 hours per week, not
to exceed 40 hours unless authorized beforehand.
Duties include and are not limited to:
Scaling bread according to daily production needs
Mixing bread according to Dorothy’s recipes
Shaping bread according to bakery methods
Mixing sourdough starter daily
Maintaining work area - shaping table, mixer, area around mixer, washing all dishes during and
at end of shift, sweeping, mopping and taking out trash
Assisting in other areas of the bakery during down-times which include helping with dishes,
assisting in bagel, focaccia and English muffin production, shaping croissants/pastries, waxing
canele molds and baking caneles
Baking pan loaves Monday-Thursday
Communicating with the head baker/kitchen manager about oven schedule/needs and
production needs for the day if they differ from the pre-set pars
This position requires being able to work as part of a team as well as on your own. Individual
time management and organization is required. As a Bread Baker there is ample room for
growth; it’s an unconventional space that requires an understanding of small business
operations and the ability to be flexible. We are a small but mighty team so
understanding/abiding by work and production schedules, being prompt, working efficiently, and
communication are all essential parts of this job. Taking liberties with work schedules, daily
production requirements, and/or daily job duties are not permitted unless authorized beforehand
by the head baker/kitchen manager.
