Our breads and pastries are hand-crafted using time-honored techniques, and we’re growing fast in NYC. We’re currently seeking a Pastry Team Member / Laminator to join our dedicated bakery team.

POSITION OVERVIEW

As part of our pastry production line, you’ll focus on mixing, laminating , and shaping traditional Danish viennoiserie such as croissants, cinnamon swirls, and our signature pastries. This is a hands-on, high-volume role working overnight or early morning shifts to prepare fresh products for our NYC stores.

You’ll be part of an energetic and skilled team where quality, consistency, and craft matter.


RESPONSIBILITIES

  • Scale and mix dough ingredients with precision using commercial mixers and sheeters.

  • Execute consistent lamination of croissant and pastry doughs with proper butter incorporation and layering.

  • Monitor and record dough and fat temperatures during production to ensure structural integrity.

  • Visually inspect ingredients and doughs for freshness and quality.

  • Portion, shape, and store doughs to spec, using FIFO and food safety protocols.

  • Communicate ingredient usage and inventory needs to supervisors.

  • Maintain a clean, sanitary workstation and follow all health department standards.

  • Collaborate with fellow bakers and laminators to meet daily production goals.

  • Follow all safety, sanitation, and workplace policies.


QUALIFICATIONS & REQUIREMENTS

  • Completion of a Culinary School program or apprenticeship preferred
  • 2-3 years of professional lamination experience preferred. Experience with Danish or Scandinavian baking methods is a huge plus!
  • Experience with mixing, bench work, proofing, and baking bread a plus
  • Ability to work overnight, weekends, and some holidays
  • Able to lift 50+lbs without restrictions
  • The ability to stand and/or bend for extended periods of time to perform essential job functions
  • Basic math skills
  • Excellent time management skills
  • Thoroughly follow company procedures according to health and safety standards
  • Adhere to all food safety regulations and procedures
