Position Overview: Proper Grit, located on the ground floor of The Ben, is our signature whisky and supper clubinspired restaurant where classic American cuisine is reimagined with a modern twist. Using fresh, locally-sourced ingredients, we create memorable dining experiences for breakfast, lunch, and dinner. Both Proper Grit and Spruzzo Rooftop promise unforgettable culinary journeys, blending ambiance and flavor in every bite. As the Lead Cook covering the PM shift, you are at the center of our evening service, ensuring every dish reflects Proper Grit's commitment to quality, creativity, and consistency. You will oversee food preparation, mentor line cooks, and collaborate closely with the Executive Chef to deliver bold flavors, refined presentations, and an elevated supper club experience that delights every guest. Key Responsibilities: Prepare and cook dinner menu items, including elevated American cuisine with a modern twist, to Proper Grit's quality and presentation standards. Supervise and mentor line cooks during the PM shift, providing guidance and support. Ensure kitchen operations run smoothly and efficiently during dinner service. Collaborate with the Executive Chef on menu execution, specials, and new dish development. Maintain cleanliness, organization, and safety in the kitchen at all times. Monitor inventory and communicate supply needs to management. Follow food safety, sanitation, and hygiene protocols rigorously. Assist with training, scheduling, and performance feedback for kitchen staff. Qualifications: Proven experience in a high-volume, upscale kitchen environment. Strong leadership, organizational, and communication skills. Knowledge of culinary techniques, plating standards, and food safety practices. Ability to work efficiently under pressure while maintaining quality and consistency. Professional attitude, teamwork mindset, and flexibility with scheduling.
