Copain is a boutique, boulangerie-style bakery under the Noble Food & Pursuits umbrella, rooted in the belief that bread should be honest, nourishing, and made with care. We craft naturally leavened breads and pastries by hand, with no preservatives, no shortcuts, just time, patience, and skill. From golden, crusty loaves to delicate pastries, everything we bake reflects a respect for tradition and a love of simple food. We supply our own Copain retail bakeries, Noble Food & Pursuits restaurants, and wholesale partners across the Carolinas. We are seeking a Head Artisan Baker to lead our overnight bread production with a strong focus on sourdough development. This role is ideal for a baker who thrives in a high-volume production environment, loves experimenting with fermentation, and wants to bring fresh ideas and techniques to our bakery. What You’ll Do Lead overnight bread production with an emphasis on sourdough breads and long-fermentation techniques Collaborate with the Executive Pastry Chef to develop and refine recipes, introduce new products, and ensure consistency across all outlets Manage production for multiple channels: Copain’s retail bakeries, Noble Food & Pursuits restaurants, and wholesale clients Oversee dough mixing, shaping, proofing, baking, and packaging to ensure the highest quality standards Maintain cleanliness, food safety, and organization throughout the bakery Provide leadership and direction to overnight staff, ensuring efficiency and attention to detail What We’re Looking For Deep passion and expertise in sourdough and artisan breadmaking Experience in a high-volume production bakery or restaurant group Strong technical knowledge of dough development, fermentation, and baking science Leadership skills with the ability to guide, train, and inspire a team Willingness to work an overnight schedule consistently Creativity and drive to contribute new ideas and innovations Why Work with Us Salaried position to be discussed at time of interview Paid time off to maintain a healthy work-life balance Enjoy discounts at all our Noble Food & Pursuits locations Monthly stipend to enjoy our restaurants Be a part of a team that values collaboration, creativity, and great food
