Position Overview:

The

Pastry Commis

at

Palm House

is an essential support role within the pastry kitchen, working closely with the

Head Pastry Chef

and

Pastry Chef de Partie (CDP)

to assist in the preparation and execution of all pastry and dessert offerings. This full-time position is ideal for an aspiring pastry professional with a strong work ethic, attention to detail, and a passion for learning in a luxury culinary environment.

You will gain hands-on experience in a refined, high-volume setting while contributing to the production of plated desserts, afternoon tea offerings, banquet items, breads, and confections. This role requires

open availability , including mornings, evenings, weekends, and holidays.

Requirements

Key Responsibilities:

Pastry Production & Prep Support Assist with the mise en place and preparation of pastries, desserts, doughs, batters, fillings, mousses, glazes, sauces, and garnishes. Follow recipes and preparation methods as directed by the Pastry CDP and Head Pastry Chef. Portion, assemble, and plate components for à la carte and banquet service with precision. Label and store all ingredients and finished products properly to ensure freshness and compliance with food safety standards. Assist with daily production sheets and prep lists to ensure timely execution of tasks. Kitchen Cleanliness & Organization

Maintain a clean and organized pastry station at all times. Wash and sanitize utensils, equipment, and surfaces according to kitchen hygiene protocols. Assist in the closing and deep cleaning duties for the pastry section. Monitor and report low stock levels or quality concerns to the Pastry CDP or Head Pastry Chef. Learning & Development

Observe and learn advanced pastry techniques, decorative methods, and plating styles. Support the team in chocolate work, sugar work, and bread production as needed. Seek feedback, guidance, and hands-on training to continue developing pastry skills. Maintain a high level of professionalism and kitchen etiquette consistent with Palm House and luxury hospitality standards. Qualifications:

Previous pastry kitchen experience is

preferred but not required ; this is an ideal entry-level role for someone eager to grow within a professional kitchen. Demonstrated interest in baking, pastry, or dessert arts. Ability to follow precise instructions, recipes, and plating guides. Reliable, punctual, and capable of working both independently and as part of a team. Strong attention to detail and cleanliness. Willingness to work in a high-volume, high-pressure environment while maintaining consistency and quality. Physical Requirements:

Ability to

stand for extended periods

(8-10 hours per shift). Ability to

lift and carry up to 25 pounds

(e.g., mixing bowls, sheet trays, containers of ingredients). Manual dexterity to handle fine tools and perform repetitive motions (e.g., piping, whisking, garnishing). Comfortable working in

warm/hot kitchen conditions

and with ovens, mixers, and other pastry equipment. Ability to work flexible hours, including

mornings, evenings, weekends, and holidays , as needed.
