Nestled within Santa Monica Proper Hotel, Palma offers an elevated dining experience that celebrates coastal California ingredients with European finesse. The restaurant's warm, sophisticated atmosphere features natural materials, earth tones, and modern design elements that complement its refined yet approachable cuisine. We're seeking an experienced, passionate Server to join our team at Palma.

Our most successful candidates bring a minimum of 3-5 years of experience from renowned hotel restaurants, private clubs, or Michelin-recognized establishments. Your expertise should reflect an intimate understanding of fine dining service standards, wine service protocols, and the subtle art of anticipatory service that defines luxury hospitality.

Job Summary:

The Palma Server is responsible for providing excellent food and beverage service to guests in a timely, professional, and friendly manner. You will take orders, deliver meals, and ensure a memorable dining experience for all patrons. The Palma Server will also maintain a clean and organized dining area, assist in food and beverage delivery, and work collaboratively with kitchen and bar staff to ensure efficient service and a positive guest experience.

Essential Job Duties and Responsibilities Orchestrate seamless dining experiences through sophisticated service choreography Guide guests through our carefully curated menu and wine program with expert knowledge Execute proper wine service, including decanting and temperature presentation Maintain immaculate attention to table maintenance and proper place setting arrangements Demonstrate thorough knowledge of classic tableside preparation techniques Provide attentive, personalized service to guests while anticipating their needs Execute proper fine dining service techniques and timing Maintain detailed knowledge of ingredients, preparation methods, and potential allergens Process payments and maintain accurate cash handling procedures Collaborate seamlessly with kitchen staff, bartenders, and support staff Participate in pre-shift meetings and ongoing service training sessions Other duties as assigned Education and/or Experience

At least 3 years of experience in a server position, preferably in one of the following: upscale/lifestyle brand hotel, or upscale restaurant High school diploma or equivalent State-Certified Alcohol Compliance Training (ABC/RBS) (Required) CA Food Handler's Card Required Skills/Specialized Knowledge

Your role demands an elevated understanding of fine dining operations, including:

5+ years proven experience in luxury hotel restaurants or equivalent fine dining establishments Comprehensive knowledge of formal service standards and fine dining etiquette Extensive wine knowledge and certified sommelier credentials preferred Polished presence and sophisticated communication skills Mastery of synchronized service techniques Advanced knowledge of food and wine pairing principles Expertise in formal place settings and service ware Understanding of classic European service standards Ability to anticipate guest needs and provide discrete, unobtrusive service Professional knowledge of spirits, craft cocktails, and premium beverages Mastery of proper champagne service and formal wine presentation Physical Demands

Ability to stand and move around the restaurant for extended periods. Ability to carry trays, plates, and drinks, with the ability to lift up to 25 pounds. Ability to work in a high-energy, fast-paced environment, particularly during peak service hours. Occasional bending, reaching, and stooping to restock supplies or retrieve items.
