Line Cook
The Madison is looking for a line cook. This is an entry-level cooking position under the supervision of chef/sous chef. Prepare basic cooking procedures by washing and chopping vegetables, cutting meats and other meal prep items. The Madison Club is open during the winter & spring season, and this role will be for a full time, seasonal need from October- June. Preferred candidates will have a flexible schedule, be able to work weekends & holidays, and understand that time off requests will not be honored during March or April (key event/festival months). Key Responsibilities
Assist in set up/preparation of culinary program for the season and on a daily basis Prepare food items for any and all food outlets according to designated menus/recipes by Executive Chef Set up assigned station with predetermined menu in place to ready station for service Prepare food items for members/guests as requested using quality predetermined method in a timely Cook all food according to recipes, quality/presentation standards and food preparation check lists Demonstrate safe/proper use of all equipment at all times Reduce kitchen waste Consult Sous Chef daily on Restaurant outlet service Understand/implement basic culinary tasks/procedures such as first-in/first-out, labeling, sanitation Monitor all food quality/presentation while preparing food. Stock/rotate food. Alert Sous Chef of low inventory items Work line, salad station, prep station, and any other stations as needed. Control pace of food orders/set tone for ticket flowing process Operate, maintain, properly clean deep fryer, broiler, stove, steamer, food processor, oven, steam table, flat top grill etc. Advise in preparation of ingredients for cooking, including portioning, chopping, storing food Label, date, store, rotate all products while maintaining assigned stock levels. Control food items requested, maintain without over production Demonstrate proper-efficient production of food items to achieve maximum productivity Assist in set up/break down of workstations Follow all company safety and security policies/procedures Skills and Qualifications
High School diploma, GED or equivalent Vocational training, job-related courses Minimum 1 year line/prep cook experience in fine dining restaurant/luxury resort/private club Frequently lift up to 30 pounds Use hands/fingers to handle/lift items Constantly stand/walk/climb or balance, bend, stoop, kneel, crouch or reach with hands/arms Must be able to stand for extended period Benefits
The hourly rate for this role is $20-$25 and is based on applicable and specialized experience and location.
