About the Role
KIRA NOLA is redefining Japanese dining in the heart of New Orleans, merging the precision of traditional Omakase with the soulful energy of the city. We are seeking an experienced Head Sushi Chef to lead our culinary team, create exceptional dishes, and deliver an intimate, Michelin-caliber guest experience.
The Head Sushi Chef is both a leader and a performer: orchestrating a high-functioning kitchen while also engaging with guests directly at the sushi counter. The ideal candidate has a deep mastery of sushi and Omakase and takes full ownership of both culinary excellence and operational success.
Key Responsibilities
- Lead and inspire a disciplined, high-performing kitchen team aligned with KIRA NOLA’s vision.
- Prepare and present Omakase dishes with precision, artistry, and consistency.
- Serve in a front-facing role during Omakase service — engaging guests with professionalism, hospitality, and passion.
- Uphold Michelin-caliber standards in cuisine, plating, and guest experience.
- Inspect and approve all seafood, produce, and ingredients, ensuring only the highest quality enters the kitchen.
- Develop seasonal menus, recipes, and presentations that honor Japanese tradition while incorporating New Orleans influence.
- Maintain a clean, organized, and compliant kitchen environment in line with food safety and sanitation standards.
- Oversee inventory management, ordering, vendor relations, and cost control.
- Collaborate with ownership and management on budgeting, P&L review, and long-term culinary planning.
- Mentor and train staff, fostering growth, retention, and professionalism.
- Lead by example, maintaining a neat, polished appearance consistent with a guest-facing fine-dining role.
- Demonstrate problem-solving skills in real time, ensuring seamless service during high-pressure situations.
- Partner with FOH leadership to ensure dietary restrictions and special requests are handled with care.
Requirements / Qualifications
- Minimum 5 years of experience in professional sushi or Japanese fine dining, with Omakase experience strongly preferred.
- Proven supervisory or leadership experience (Sous Chef or higher).
- Mastery of sushi rice, knife skills, fish butchery, and Omakase preparation.
- Strong understanding of food safety and sanitation standards; ServSafe Manager or equivalent certification required.
- Comfortable engaging directly with guests in a high-end, intimate dining environment.
- Excellent leadership, communication, and organizational skills.
- Ability to thrive under pressure and lead calmly during service.
- Physically able to work long shifts on your feet and lift up to 50 lbs.
- Professional appearance and demeanor required.
