Overview The Bartender is responsible for the complete set up of the bar area and the mixing of drinks for all guests and servers. Need to maintain the service and cleanliness of the bar area, ensuring quality service, guest satisfaction and control over liquor inventory.
Responsibilities
Beverage Preparation & Service
Prepare and serve a variety of Spanish and classic cocktails, wines, beers, and non-alcoholic beverages in accordance with hotel specific procedures.
Pour and serve Spanish wines and sherries with knowledge of regional varieties and flavor profiles.
Ensure accuracy, consistency, and presentation of all drinks in accordance with restaurant standards by using proper recipes, jiggers for making cocktails, and measuring tools for batching.
Product Knowledge- Food and Beverage
Maintain strong knowledge of Spanish wines, spirits, and cocktail ingredients.
Educate guests about beverage options, making recommendations and offering pairings with tapas.
Stay up to date on menu changes, seasonal offerings, and rotating wine lists.
Possess strong knowledge of Spanish cuisine, regional ingredients, and preparation styles.
Be familiar with Spanish wines, sherries, beers, and spirits, and offer pairing suggestions.
Provide guests with cultural context or stories behind certain dishes or drinks when appropriate.
Maintain working knowledge of the full food menu, including ingredients, allergens, and preparation styles.
Be able to describe key tapas items to guests and answer basic questions.
Learn Spanish dish names and pronunciations to deliver food confidently and professionally.
Guest Interaction & Hospitality
Engage guests seated at the bar with friendly, attentive, and personalized service.
Create a welcoming atmosphere that reflects the spirit of Highgate hospitality.
Answer questions about the menu and offer insight into Spanish drinking culture and traditions.
Ensure guests are greeted/sent off by name when applicable.
Bar Maintenance & Organization
Maintain cleanliness and organization of the entire bar area, including bar top, shelves, tools, and equipment by using cleaning checklists.
Restock liquor, beer, wine, garnishes, mixers, and bar supplies as needed using proper par amounts.
Clean glassware and bar equipment regularly to meet health and safety standards.
Cleanliness & Setup
Keep the bar top clean and organized, ready for incoming guests.
Breakdown of bussed plates/trays properly by using the proper garbage receptacles, scraping excess food off plates, and organizing dishes, utensils, and glassware properly in the dish area.
Separate soiled linen and towels in the proper containers.
Fold napkins to keep bar team ready for service and for the next shifts (Always should have back up folded napkins 3 times the amount of bar seats).
Help polish silverware, glassware, and restock bar side stations.
Ensure closing side work duties are completed per hotel standards using closing checklist.
Safety & Efficiency
Follow all New York State Liquor Laws and responsible service practices, checking IDs and managing guest consumption responsibly.
Follow all food safety and sanitation standards during food handling, transport, and beverage service.
Use proper tray techniques to ensure safe and efficient service.
Report any spills, broken items, or unsafe conditions to management immediately.
Be familiar with all fire exit locations and fire extinguisher locations and know how to operate.
Inventory & Compliance
Monitor bar inventory levels and communicate needs to management.
Follow proper procedures for receiving, storing, and rotating bar stock.
Cash Handling & POS
Enter drink orders into the POS system accurately and promptly.
Handle cash, credit card, and gift card transactions efficiently.
Reconcile cash drawer and sales at the end of each shift.
Team Collaboration
Work closely with servers and kitchen staff to support timely service and order coordination.
Assist with opening and closing duties, including side work and deep cleaning.
Participate in staff training, tastings, and team meetings.
Assist with opening, mid-shift, and closing side work as assigned.
Support teammates with delivering of drinks and other guest needs.
Qualifications
High School diploma or equivalent and/or experience in hotel or a related field preferred.
Flexible and long hours sometimes required.
Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
Ability to stand during entire shift.
Must be able to effectively communicate both verbally and written, with all level of employees and guests in an attentive, friendly, courteous and service oriented manner.
Must be effective at listening to, understanding, and clarifying concerns raised by employees and guests.
Must be able to multitask and prioritize departmental functions to meet deadlines.
