JW Marriott Miami Turnberry Resort & Spa The Executive Director of Food & Beverage is responsible for successfully managing the Food and Beverage operations of the hotel and to run the operation profitably (meeting or exceeding budget), ensuring full implementation of JW Marriott Turnberry Miami Resort and Spa standards of service and safety and the highest levels of guest satisfaction. As a member of the Executive Committee, the position champions, develops and implements property-wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer and property associates. Position Requirements
Minimum 5-10 years’ experience as a leader in a food and beverage environment, luxury hotel preferred. Strong restaurant operation background. Proven leadership, organizational, interpersonal and communication skills. Possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line. Must be effective at handling problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary. Must be able to work with and understand financial information and data, and basic arithmetic functions. Responsibilities
Responsible for directing the Restaurant, Banquets, In-Room Dining, Lounge and Bars, and Recreational Operations. Constantly monitor food and beverage operations for maximum sales growth and profit potential while maintaining guest satisfaction. Responsible for short- and long-term planning and the management of the Food & Beverage operations in the front of the house. Directs the budget management for the department. Ensures budget are complete, accurate and in line with the hotel goals. Assist to evaluate and potentially reposition the food and beverage concept through food format, restaurant design and marketing, and specific activities to build business as needed. Focus on food and beverage marketing and guest service delivery efforts that build the loyalty of existing customers while also attracting new ones. Work with the F&B team to develop distinctive or signature services and products that can provide a degree of separation from our competitors. Work with the Culinary on menu engineering. Track weekly labor reports to ensure productivity. Exercise quality control for food and beverage. Performing daily walk-through to ensure full compliance with Department of Interview, hire, train, and motivate a highly qualified and effective team, capable of providing optimum staff support for the organization; plan, assign, review, and direct work; evaluate and appraise performance; reward and discipline employees; address complaints and resolve problems. Ensure all daily rehearsal meetings are conducted. Coordinate food and beverage operations with other hotel departments to ensure efficient guest service. Works with Human Resources to ensure compliance with all local, state, and federal (OSHA, Health Department) regulations. Reviews property specific event operations annually and makes appropriate adjustments. Perform any other reasonable duties as requested by senior management. Education
4-year University/College degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major. Five plus years of experience in and beverage, or related professional area. Skills And Abilities
Ability to communicate in the English language. Second language is a plus. Ability to work flexible schedules including holidays and weekends and able to perform multiple tasks. Able to work with and understand financial information and data, and basic arithmetic functions. Experience using computers and software programs such as Microsoft Office (Word, Excel, and Outlook). Physical Requirements
Must be able to work in a fast-paced environment. Must be physically fit to lift, pull, and push items up to 50 pounds. Also requires standing/walking/reaching and bending throughout shift.
