Job Summary:
The Breakers is seeking a dynamic and innovative Director of Beverage to oversee the beverage operations across nine bars at our luxury resort. This role demands a creative leader with a passion for mixology, exceptional guest experiences, and operational excellence. The ideal candidate will have extensive experience managing high-end beverage programs, training teams, and driving revenue growth while maintaining the highest quality standards and team member satisfaction.
Key Responsibilities:
Beverage Program Development & Execution: - Develop, implement, and maintain standardized drink recipes to ensure brand consistency across all outlets. - Create and refine specialty and seasonal cocktail menus that align with The Breakers Brand, current industry trends, and guest preferences. - Coordinate in-house wine team, including scheduling, PTO coverage, Brand Style Guide compliance, and wine training with restaurant teams. - Source and curate a world-class selection of spirits, beers, and non-alcoholic beverages.
Team Leadership & Training: - Assist in developing a comprehensive training program for bartenders and bar staff on spirits knowledge, drink preparation, service standards, and sales techniques. - Demonstrate strong guest service standards and a deep knowledge of mixology.
**Financial & Business Strategy:** - Monitor beverage sales performance, track key metrics, and implement strategies to maximize revenue and profitability. - Develop and assist the restaurant general managers in achieving beverage budgets and cost controls while maintaining exceptional quality. - Identify opportunities for special events, promotions, and partnerships to enhance the resort's beverage offerings.
Guest Experience & Innovation: - Stay ahead of industry trends to introduce innovative beverage concepts and experiences. - Tailor offerings to enhance satisfaction based on concept and guest mix. - Partner with the sustainability leader to develop sustainable and eco-friendly practices in beverage operations.
Qualifications & Experience: - Experience in a beverage management role, preferably in a luxury resort or high-volume hospitality setting. - Expert knowledge of mixology, spirits, and beverage program management. - Strong leadership and training skills. - Proven ability to drive sales and profitability while maintaining brand integrity. - Excellent organizational, communication, and interpersonal skills. - Familiarity with POS systems. - Certification in responsible alcohol service (e.g., TIPS, ServSafe) is preferred.
