Job Summary:
The Torchbearer is more than a bartender - they are the creative and experiential lead behind Little Torch, an elevated cocktail lounge that blends refined mixology with theatrical presentation. With a focus on table-side service, storytelling, and exceptional technique, the Torchbearer offers guests a personalized and immersive journey in an intimate, design-forward setting. Essential Job Duties and Responsibilities Guest Experience & Table-Side Service
Deliver deeply personalized, table-side cocktail service that transforms each visit into a tailored experience. Engage guests with confident, elegant presentation and knowledge, performing table-side finishes and interactive builds (e.g., advanced cocktail techniques, clarified pours, rare spirits). Anticipate guest desires, guide selections based on mood and preference, and create meaningful, lasting connections. Represent Little Torch with charisma, polish, and discretion - crafting a sense of invitation and exclusivity.
Beverage & Cocktail Program
Execute a highly curated cocktail menu rooted in both tradition and innovation, featuring premium spirits and inventive techniques (fat-washing, sous vide, milk clarification, etc.). Collaborate with the property's Beverage and Culinary teams to evolve the menu seasonally and incorporate local flavors, stories, and inspirations. Ensure consistency in cocktail builds, aesthetics, and taste - maintaining uncompromising quality at every step. Act as a brand ambassador for Little Torch and The Shelborne by Proper, educating guests and team members with storytelling and beverage knowledge.
Atmosphere & Operations
Maintain the mood and ambiance of Little Torch - sophisticated, dimly lit, detail-oriented, and quietly magnetic. Manage mise en place for both bar and mobile service stations; maintain all tools, carts, and serviceware to the highest standards. Oversee back bar organization, assist with inventory and purchasing of specialty ingredients and rare spirits. Train and mentor junior bartenders and barbacks, emphasizing hospitality, precision, and presentation.
Compliance & Safety
Comply with all local and state laws regarding alcohol service. Maintain current food handler and alcohol certifications (e.g., TIPS). Follow all The Shelborne by Proper protocols for safety, sanitation, and cleanliness.
Qualifications
3-5 years of mixology experience in a luxury hotel bar, fine-dining lounge, or high-end hidden bar setting. Experience with table-side cocktail service or tableside carts strongly preferred. Deep knowledge of spirits, cocktail history, advanced bartending tools, and modern techniques. Graceful and engaging presence with a strong command of the room. Familiarity with The Shelborne by Proper' ethos and aesthetic, and the ability to embody it in both service and style. Evening, weekend, and holiday availability required. Advanced beverage certifications (BarSmarts, WSET, etc.) are a plus.
