Core Responsibilities

Sanitation System Compliance

  • Accountable for verifying that all sanitation activities are soundly designed, performed as intended, and properly documented — ensuring the facility is cleaned properly and has ongoing performance evaluations to prove safe and wholesome products meeting company goals.
  • Makes defendable decisions to ensure USDA regulatory and company objective compliance, without unjustified decreases in operational productivity or efficiency.

  • Conducts regular meetings with the plant's sanitation service provider, plant management and/or USDA to discuss sanitation findings.

RODAC Program Maintenance

  • Measures equipment cleaning and facility sanitation performance at pre-op via RODAC in the Smithfield system.
  • Responsible for administration of the plant's RODAC program, including distribution of site sampling lists, compilation and analysis of results, and follow-up on unacceptable results until satisfactory performance is achieved.
  • Works closely with the Plant Purchasing Agent to ensure RODAC supplies are continuously available.

Employee Training

  • Conducts pre-op inspection training with plant staff prior to their first pre-op inspection.
  • Provides feedback to Plant Management on the performance of pre-op inspection staff so corrections can be made when necessary.
  • Develops and fosters a strong working relationship with the USDA.
