Food Scientist
to help us improve, expand, and scale the Just Egg product line and bring our next generation of products to life.
About The Role We’re looking for a hands-on, solutions-oriented
Food Scientist
with a deep curiosity for plant-based systems and a knack for translating benchtop formulations into scalable, high-quality products. This role is equal parts product development and commercialization, working across R&D, Operations, and external partners to support both current and future Just Egg products. A key part of this role includes managing technical aspects of our co-manufacturing relationships—ensuring our products deliver the same quality at scale as they do in the lab.
What You'll Do
Lead formulation development, optimization, and testing for current and future Just Egg products
Design and execute experiments to improve product performance (e.g., texture, flavor, shelf life, cooking functionality)
Collaborate with Quality, Regulatory, and Operations teams to ensure product formulations meet compliance, labeling, and manufacturing standards
Act as the technical point of contact for co-manufacturers—supporting trial execution, troubleshooting scale-up challenges, and ensuring product quality across facilities
Analyze production data, lab results, and consumer feedback to drive continuous improvement
Maintain accurate records of formulations, test plans, and findings
Support product launches and innovation initiatives in partnership with cross-functional teams
Travel to co-manufacturing sites (as needed) to provide on-the-ground technical guidance
Who You Are
BS or MS in Food Science, Food Engineering, or a related field
Minimum 3, ideally 5+ years of experience in product development or process development, ideally in plant-based or protein-rich food products
Proven experience working with external manufacturers, co-packers, or tollers
Strong understanding of emulsion systems, protein chemistry, or hydrocolloid functionality a plus
Excellent problem-solving skills and ability to operate independently in a fast-paced, iterative environment
Comfortable translating between lab and production—hands-on, resourceful, and execution-focused
Strong communication and organizational skills, with the ability to manage multiple priorities and stakeholders
Bonus If You Have
Experience launching products from benchtop to shelf
Familiarity with food safety standards and regulatory requirements for USDA- or FDA-regulated products
Prior work in a startup or high-growth food company

Compensation:
The expected base salary range for this role (based in Alameda, CA) is $135,000 - $175,000.
Additional Information & Requirements This is a full-time role based at our Headquarters in Alameda, CA with a 5 day in-office/ onsite requirement. This role requires unrestricted domestic and international travel up to 15%. Applicants must be authorized to work in the United States. Eat Just, Inc. participates in E-Verify.
