Overview
The Beverage Manager at Mercadito is a creative and hands-on leader responsible for overseeing all aspects of the bar program, from cocktail development and staff training to inventory management and vendor relations. This role is ideal for someone passionate about mixology, spirits education, and creating memorable guest experiences. With Mercadito expanding and a new location opening early next year, this position offers the unique opportunity to serve as the opening bar manager for our newest venue — helping design, develop, and launch a new beverage program from the ground up. The Beverage Manager will collaborate closely with ownership, the General Manager, and the culinary team to maintain consistency, profitability, and innovation across all beverage operations while shaping the bar identity for Mercadito’s next chapter.
Responsibilities
Leadership & Training: Lead, train, and inspire the bar team to deliver exceptional cocktails and guest service.
Beverage Program Management: Develop and update cocktail menus, maintain accurate recipes and costing, and ensure all drinks reflect Mercadito’s standards and brand identity.
Inventory & Cost Control: Oversee weekly beverage inventory, control waste and pour costs, and track performance through reporting.
Vendor Relations: Build and maintain strong relationships with liquor and mixer vendors; negotiate pricing, samples, and partnerships.
Events & Marketing: Collaborate with marketing to create and execute beverage-driven promotions, tastings, and special events.
Guest Experience: Engage with guests at the bar to ensure satisfaction and maintain an energetic, welcoming environment.
Compliance & Safety: Ensure adherence to all health, safety, and liquor laws while maintaining organized, efficient bar operations.
Qualifications
Minimum 1 year of bar or beverage management experience in a high-volume or upscale concept
Strong knowledge of cocktails, spirits, wine, and beer, with a focus on tequila and mezcal
Proven ability to manage inventory and beverage cost controls
Experience training and leading a bar team preferred
Excellent communication and organizational skills
Availability to work nights, weekends, and holidays as needed
Compensation & Benefits Base pay range:
$65,000.00/yr - $80,000.00/yr
Salary:
$65,000 - $80,000 (based on experience)
