Overview
Executive Chef opportunity with CCL Hospitality Group. This role leads daily kitchen operations, including recruiting, training, and food preparation, while delivering show quality food and developing onsite staff. Focus on resident, employee, and client satisfaction and financial performance by meeting monthly budgets and safety standards. Responsibilities
Lead daily culinary production, ensure food quality and presentation, compliance with safety and sanitation standards, drive team productivity and performance, manage costs, and support overall profitability. Determine food presentation and create decorative displays. Provide direction on menu development based on product availability; create distinctive specials with seasonal ingredients. Source fresh ingredients and monitor produce and meat for freshness. Maintain product consistency through inspections of seasonings, portions, and appearance of food. Research customer preferences and develop menus that incorporate local flavors. Prepare and cook foods of all types for regular service and special events. Demonstrate new cooking techniques and equipment to staff. Supervise and coordinate activities of cooks and food preparation staff. Ensure compliance with federal, state, local and company health, safety, sanitation standards. Guide subordinates by setting performance standards and monitoring performance. Communicate safety procedures and ensure understanding of safety codes among staff. Monitor quality of raw and cooked foods to meet standards. Enforce food safety and sanitation guidelines; maintain purchasing, receiving, and storage standards. Business & Financial Acumen
Participate in development and implementation of community business strategies aligned with client mission and values. Manage department controllable expenses (food cost, supplies, uniforms, equipment). Develop and implement guidelines for purchasing and receiving; analyze financial and operational information to adjust plans, labor, and costs. Develop, implement, and manage the department budget; analyze and control labor and food costs to meet objectives. Identify revenue and expense opportunities; monitor inventory, purchasing, and disbursement of food supplies. Schedule staff based on forecasted volumes. Ensuring Exceptional Customer Service
Deliver 100% resident satisfaction through training and resources for team members to maximize engagement and service quality. Maintain professional appearance and attitude when engaging with residents and staff. Improve service by understanding guest needs, providing guidance and coaching. Support service behaviors that exceed expectations and retain customers. Empower employees to provide excellent service; provide ongoing training and clear expectations. Foster genuine hospitality and teamwork; use resident feedback to improve the department. Review resident satisfaction data to identify improvements; respond to guest problems and complaints. Team Building and Management
Regularly lead team meetings and set goals (performance, budget, and team goals). Solicit feedback with an open-door policy and address employee concerns. Develop strategies to support team engagement and ensure fair treatment. Provide training and tools for team members to perform responsibilities; communicate performance expectations and provide ongoing feedback. Coaching and counseling to achieve performance objectives. Preferred Qualifications
A.S. or equivalent experience Minimum 5 years of progressive culinary/kitchen management experience Extensive catering experience a plus; high-volume, complex foodservice operations desirable Institutional and batch cooking experience; hands-on chef Knowledge of food and catering trends; focus on quality, production, sanitation, cost controls, and presentation Computer skills: Word, Excel, PowerPoint, Outlook ServSafe certification is highly desirable Apply to CCL today.
