Remote Cook Supervisor, WNS Camp - North Slope (Wage DOE & Benefits - 3x3 ROT/Housing/Meals - Alaska)

The Remote Cook Supervisor is responsible for the daily preparation, production, stocking, and presentation of a variety of foods, including breakfast, entrees/soups, salads, salad bar accompaniments, pantry production, maintaining serving line levels, and the cleaning and sanitizing of preparation areas and equipment, and baking. All duties are to be performed in accordance with NMS' mission, vision, and values as well as departmental policies, practices, and procedures.

Note: This is a rotational position with a 3-week on / 3-week off schedule, twelve (12) hours per day, supporting the WNS Camp on the North Slope. Point of hire origin is Anchorage, AK.

Responsibilities

  • Performs all main line food production duties with items determined by assigned shift.
  • Reviews the needs of the day with assigned supervisor(s), completes production sheets, reviews maintenance reports, and verifies supply needs and availability.
  • Assists assigned supervisors with menu and recipe development.
  • Monitors and replenishes all salad bar and pantry production items using proper rotation procedures.
  • Cooks breakfast, lunch, dinner foods, coffee, drinks, tray items, sandwiches, salad dressings, meats, cheeses, vegetables, and related items.
  • Prepares, places, presents, and restocks items such as bulk/fresh vegetables, salads, relish trays, meats, sauces, cheeses, and dressings.
  • Prepares production sheets to determine amounts needed for serving areas.
  • Uses a variety of preparation procedures and equipment, including cutting instruments; creates new salads as needed.
  • Assists other personnel as needed in food production or special duties.
  • Serves in the service line as needed and handles special food preparation or cleaning projects as required.
  • Rotates food items appropriately and maintains sanitation of preparation areas and equipment.
  • Maintains stock levels, communicates with supervisors about item needs, and completes menu display announcements as outlined by a supervisor.
  • Organizes freight and supervises staff as assigned (directly or through lead personnel) of 30+ employees engaged in industrial housekeeping and related services, ensuring safety and cost-effectiveness.
  • Oversees quantity and quality control in food production and overall sanitation of assigned areas; assists in supervision and training of food service personnel.
  • Adheres to rotation procedures for produce and dairy products and maintains sanitation and safety of equipment and storage areas.
  • Notifies supervisor if safety and sanitation standards are not being met.

Qualifications

  • High School Diploma or GED equivalent.
  • At least five (5) years of directly related restaurant cooking experience with high-volume production, food service production, and supervisory techniques.
  • Ability to instruct and train others and manage multiple tasks concurrently.
  • Alaska Food Workers Card and/or ServSafe Certification (on hire or obtainment).
  • Must pass pre-employment requirements (drug test, physical/fit-for-duty assessment, hearing test). If not near a testing facility, travel to the nearest facility is required at applicant's expense.
  • Ability to work as part of a team and make decisions with limited supervision.
  • Ability to stand for 12 hours per shift and live in dormitory-style housing at a remote camp with cleanliness requirements.
  • Contract requires ability to read, write, and speak English and to adhere to safety guidelines and regulations.

Working Conditions and Physical Requirements

Environment: Indoor/Outdoor in an industrial kitchen setting located in a remote camp; frequently exposed to arctic conditions.

Noise: Moderate to loud. Travel by plane or bus to remote camps as needed.

Physical: Must be able to stand, walk, climb, push, pull, use hands and arms, stoop, kneel, and crouch; lift up to 50 lbs on multiple lifts; carry 20 lbs; push 50 f-lbs; perform squats, kneels, climbs of stairs; frequent movement and stamina required.

Additional Information

Flights to remote locations are the employee’s responsibility. Candidates residing in Alaska for Alyeska Contract: pre-employment testing will be scheduled near residence when possible. All pre-employment testing requirements may include safety training and various medical/testing requirements.
