Senior Dining Room Manager
Napa Rose, the Fine Dining crown jewel of Disneyland Resort’s culinary landscape and a Forbes 4-Star restaurant with an Award-Winning Wine List and Bar Program, seeks a visionary leader to join as Senior Dining Room Manager. As we celebrate our 25th anniversary in 2026, we are looking for excellence, innovation, and guest-focused leadership to sustain world-class service and brand standards.
The Senior Dining Room Manager is an advanced leadership role responsible for stage management of a Fine Dining restaurant team, mentoring fellow Dining Room Managers, ensuring safe and efficient operations, driving an immersive Guest experience, increasing Cast engagement, and upholding the Disney hospitality heritage.
Responsibilities
Provide a world-class fine dining experience by focusing on Disney Service Standards to maintain the Restaurant’s Forbes rating
Demonstrate commitment to excellence by engaging in daily operations, interacting with guests and cast members, and resolving issues
Maintain a positive attitude and strong cast focus to inspire, engage, coach and develop a diverse and talented team
Recognize cast members and hold them accountable for delivering excellence with the Five Keys: safety, courtesy, inclusion, show, and efficiency; teach and develop the cast
Exceed guest expectations to achieve/maintain Forbes 5-star rating and positive guest feedback
Advocate for change, inclusion, innovation and continuous improvement
Serve as a functional / subject matter expert of the operation
Participate in departmental meetings and communicate relevant information to cast members
Provide operational perspective in project planning and LOB departmental meetings
Make balanced day-to-day operational decisions benefiting guests, cast members, and business demands
Manage daily staffing levels and anticipate shift coverage needs based on demand; drive daily results
Support local projects and monitor potential impacts to guest and cast experience
Act as a change agent to integrate processes, remove barriers, and align performance goals of hourly Cast
Help develop and drive change to enhance overall revenue goals of the operation
Basic Qualifications
Extensive wine expertise
Extensive expertise in Forbes 5-star standards
Certification in Wine Education or equivalent experience
Leadership experience in engineering a high-end bar menu focused on craft cocktails
Ability to articulate current trends in the fine dining space
Extensive understanding of fine dining cooking terms and techniques
6 years leadership/managerial experience
Strong verbal and written communication skills, including conflict resolution, problem-solving and decision-making
Understanding of P&L to drive greater revenue
Ability to work in a fast-paced environment
Positive leadership role model and ability to lead effectively in a team environment
Ability to work independently as well as with teams
Operational guest service experience and guest service skills
Excellent organization, multi-tasking and time management with attention to detail
Proficient in Microsoft Office and adaptable to new technology
Ability to coach Cast Members to correct behavior across lines of business
Understand financial impact of operation (budget, revenue, labor, inventory, costs) and plan around Key Business Indicators
Flexible with work schedule, including weekends, variable shifts and holidays
Ability to partner with other hotel departments (Signature Dining, Banquets, Housekeeping, Front Desk, Bell & Valet, Spa, Engineering, Stores, etc.)
Highly motivated, results-oriented, and able to influence and motivate peers
Collaborative, with strong communication and change-agent mindset
Preferred Qualifications
Experience managing a Forbes-rated fine dining restaurant
Prior experience at a Michelin-starred restaurant
Union experience
Bilingual skills
6-9 years in a leadership role within Food & Beverage with responsibilities for: driving revenue, labor management, guest service, team development, business acumen, heritage/brand knowledge, and versatility
Preferred Education:
Court of Master Sommelier’s Introductory Level or higher
The hiring range for this position is $77,000-$95,100. The base pay offered will consider internal equity and may vary by geographic region, knowledge, skills, and experience. A bonus and/or long-term incentive units may be provided, in addition to medical, financial, and other benefits, dependent on the level and position offered.
