Banquet Executive Chef role at Hollywood Casino Aurora. The Banquet Executive Chef is responsible for the overall culinary operations of banquet and catering functions, ensuring the highest quality food production, presentation, and service. This role leads the banquet culinary team in executing large-scale events, meetings, and special functions while maintaining cost controls, food safety, and exceptional guest satisfaction. Responsibilities
Achieve desired results through established methods, procedures and guidelines to maintain standards and high-quality service. Monitor results through inspection, evaluation and analysis. Make changes if necessary to achieve the end result. Maintain food costs and labor percentiles. Maintain consistent food quality for designated outlets. Develop and implement menus for designated outlets. Assist Director/VP with the implementation and updating of the Food and Beverage Inventory Control System. Oversee F&B Back of House leadership staff in designated outlets. Develop, implement and manage operational goals and monitor performance and profit objectives. Create effective and efficient schedules, while maintaining labor costs, meeting staffing objectives and achieving guest satisfaction. Assist in the budget process for the department and provide recommendations; ensure compliance with departmental budget initiatives; report budget concerns to manager. Stay current on gaming laws and regulations applicable to the Food & Beverage Department. Support and promote superior customer service; ensure customer service standards are followed by all team members and address issues as they arise; drive department customer service goals. Maintain cost control methods and procedures by monitoring pars and inventory. Maintain established quality assurance procedures to ensure health department and customer service standards. Ensure compliance with all regulatory requirements within area of responsibility and report issues to Executive Management / GM. Maintain strict confidentiality in all departmental and company matters. Qualifications
Bachelor’s degree (B.A. / B.S.) in culinary or related field; five years of related experience and/or training, or equivalent combination of education and experience. Supervisory or management experience in hotel and/or casino environment required. Excellent verbal and written communication skills. Proficient in Microsoft applications (Excel, Word, and Outlook). Extensive Food and Beverage knowledge. Flexible to work all shifts including holidays, nights, weekends, and overtime as business needs dictate. Ability to write reports, business correspondence, and procedure manuals. Ability to present information and respond to questions from groups of managers, clients, customers, and the general public. Mathematical ability to perform calculations and interpret data as needed. Ability to interact with guests, staff and colleagues and resolve problems in a diplomatic and tactful manner.
