$20.63/per hour Job Summary: The Banquet operation within the Broadmoor Hotel offers a variety of chic banquet dining experiences through showcasing seasonal and local produce. The Banquets operation assists with maintaining the Forbes Travel Guide Five-Star and AAA Five-Diamond ratings for the Hotel. This role will play a key part in continuing to uphold our reputation and providing exceptional service to our guests. As a member of the Culinary Banquets Team, you will be responsible for preparing and presenting all banquet-specific menu items. You will assist the Banquet Chef in daily responsibilities, including ordering, kitchen management, execution of banquet menu items, and managing a staff of 15-20 employees daily. This person must be able to follow the direction of the Executive Sous Chef of Banquets and Banquet Chef in maintaining the highest standards of food quality, taste, and production. Essential Duties and Responsibilities
include the following and other duties may be assigned: Assists in preparation of all banquet menu items in assigned area daily. Assists with execution of culinary banquet events. Assists with organization of product, equipment, and necessary paperwork. Experience with Banquet Event Order (BEO’s). Experience with Production Lists. Experience with operating, maintaining, and cleaning necessary machinery. Follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department. Checks coolers for proper rotation of food items to prevent spoilage. Ensures adequate amount of product is on hand and notifies supervisor of what to order. Takes required breaks, notifying supervisor prior to leaving station. Maintains a clean, organized, and sanitary work area following safety guidelines. Follows all hotel and kitchen policies and procedures. Advises chef when food inventory is depleted. Maintains a working knowledge of properly storing, rotating, and maintaining products. Must be able to maintain ServSafe and health department standards. Ability to check and complete mise en place and pars to set up the station. Prepares food so that quality, taste, and appearance of food are in accordance with Broadmoor standards while in a timely manner. Maintains walk-in coolers and food storage areas daily. Highly responsible & reliable. Ability to work well under pressure in a fast-paced environment. Ability to work cohesively as part of a team. Ability to focus attention on guest needs, always remaining calm and courteous. Gives instructions to cooking personnel in fine points of cooking. Assumes responsibility for the kitchen. Willingness to work in a fast-paced, team-oriented environment. Upholds and abides by all Broadmoor policies, procedures, and safety guidelines. Other duties as assigned.
