Appearance

How we look and appear to each guest provides an important impression of our company. Job Description Responsibilities

The Asian Specialty Chef assists to ensure smooth and efficient BOH operations for the property’s Noodle Bar & Sushi restaurant. Schedule employees and consult with them on daily responsibilities, monitoring progress to meet production timeframes. Control production levels to minimize waste and advise the Chef on progress. Implement operations, standards and procedures established by the Chef, including sanitation, tasting of products and presentation. Ensure all food is prepared in accordance with operation standards. Interact with guests as much as possible to create a memorable experience. Assist other line employees with daily responsibilities. Strive to eliminate over-production and over-purchasing. Ensure all food items are produced in accordance with established standards for preparation, storage and accountability. Maintain production and storage areas in compliance with city and state health department codes. Promote positive public/employee relations at all times. Maintain a clean, safe, hazard-free work environment within area responsibility.

Qualifications

Minimum of two (2) years of culinary management experience in a high-volume Asian-themed standalone restaurant, large hotel, casino or resort. Two (2) year culinary arts degree. High volume wok experience. Thorough knowledge of Hong Kong, Cantonese, and other regional cooking styles desired. Dim sum experience desired. Thorough understanding of Chinese and Vietnamese cooking including production and execution. Ability to communicate in Chinese and/or Vietnamese. Ability to analyze Food and Beverage data. Proven ability to reduce food costs. Strong administrative and computer skills. Demonstrated high level of service to guests. Strong verbal and written communication skills. Ability to lead and develop a cohesive culinary team. Ability to interface effectively with FOH staff to produce a positive guest experience.

Work Environment

Duties and responsibilities are typically performed in the back of house of the casino, which can be fast-paced and noisy. The employee may also be on the casino floor and exposed to casino-related environmental factors including secondhand smoke and loud surroundings. While performing duties, the employee must stand, walk, use hands, reach, talk or hear, and may need to lift up to 50 pounds. Vision requirements include close, distance, color, peripheral vision and depth perception.

First preference in hiring, training, promoting and in all other aspects of employment is given to members of the Seminole Tribe who meet the job requirements. Second preference is given to members of other federally recognized Native American Tribes who meet the job requirements.
