Food Service Manager, Murfreesboro Corp, Murfreesboro, Tennessee. Job Summary

The Food Services Manager is responsible for delivering the food service for four campus locations. Directs, supervises and evaluates the full operations of a food service program of a commercial kitchen; plans and develops menus; purchases food and maintains an adequate level of inventory for program needs; prepares and administers a food budget; ensures food service program operates in compliance with health standards and regulations; supervises, schedules, evaluates, and participates in the work of kitchen personnel including the cooking and serving of meals. Responsibilities

Directs, supervises and evaluates the full operations of a food service program for four campus locations. Plans and develops menus; purchases food and maintains inventory for program needs. Prepares and administers a food budget; ensures compliance with health standards and regulations. Supervises, schedules, evaluates, and participates in the work of kitchen personnel including cooking and serving meals. Knowledge, Skills, and Abilities

Knowledge of food safety and preparation; ensures compliance with local, state, and federal regulations. Knowledge of principles and safety practices of food preparation and management; knowledge of meal planning techniques. Knowledge of proper cooking methods and procedures; acceptable food storage and cleaning techniques. Knowledge of budget preparation and administration; ability to order food and kitchen supplies economically and maintain inventory. Ability to lead, motivate, supervise and evaluate subordinate employees; plan and cook nutritious, tasteful, and safe food for large groups in a timely manner. Ability to ensure kitchen appliances are properly operated and maintained. Education and Experience

High School Diploma or GED; degree in culinary arts preferred and two to three years progressively responsible experience in food service management with at least six months supervisory experience, or an equivalent combination of training and experience. Physical Requirements/Working Conditions

Ability to meet attendance requirements; read, write, and communicate in English; ability to cook, taste, and smell food. Duties are usually performed seated, with standing or walking as needed. Ability to perform mathematical computations; ability to work flexible hours and weekends. Moderate physical effort with occasional lifting up to 50 lbs. Work may involve exposure to heat, refrigeration, noise, dust, and dirt. Additional Comments
