RIVIERA DINING GROUP . RDG introduces its first restaurant-concept brand, MILA, offering guests a MediterrAsian culinary journey in Miami Beach. RDG is a collective dedicated to excellence, immersive experiences, and a refined culinary journey across its concepts, including AVA MediterrAegean in Winter Park, CASA NEOS on the Miami River, Claudie (opened Feb 2025), and MM (Membership Community), with upcoming projects in Coconut Grove and other locations. As the Bar Supervisor, AVA you will oversee pre-opening phases and the operation of our bar concept, including maintenance and monitoring of restaurant products and systems, as well as managing training and tasks such as Toast, Fintech, and OSE. You are accountable for approving new hires and leading onboarding at a high level, while guiding and providing feedback to all parties involved. This is a pre-opening role and requires knowledge of bar setup, inventory, and staff hiring/development. Responsibilities
Face of the program; lead from the front and know each floor/venue intimately Maintain intimate knowledge of schedules for all bar staff and coordinate with the General Manager Participate in weekly reports (sales, product mix, expenditures, general operations) for review with the GM/management team and Director of Beverage Operations; attend all management meetings for all floors and venues Update and maintain administrative systems (Menu Matrix, FOH staff training documents, costing worksheets, produce budgeting, produce and spirit order sheets, toast requests, menu edits, cleaning schedules, etc.) Support the Head of Mixology to ensure consistency of crafted cocktails Fluent in LTS training and operations Responsible for DOH compliance Lead brand meetings when required Create and maintain vendor relationships to obtain deals and discounts with approval of the Director of Bar Operations Lead mandatory monthly bar team meetings for each venue Menu maintenance and engineering submissions for approval Oversee all new hires and training schedules; physically train new team members when leads are unavailable Manage all product in and out of building and ordering/stocking for all venues Maintain pouring cost goals and uphold executive standards for each space Report and work closely with the GM, Head of Mixology, and Director of Beverage Operations Work 5 days a week, with emphasis on the busiest shifts; administrative day for weekly liquor ordering; night shifts may be required Assist with Menu maintenance via Marketing (QR, Physical Menu, Golden Hour, Brunch) Occasionally adjust hours based on bar program directors’ responsibilities Ensure prep and consistency of service Handle administrative duties for new menu launches, including menu matrix, staff education, pre-shift, and tastings Review Toast updates Coordinate bar auditions/recommendations/certifications when leads are busy Often arrive early to train and oversee new prep team members Qualifications
Minimum of 2-3 years management experience as a Bar Manager in an upscale or luxury high-volume environment Experience with extensive craft cocktail and wine inventories Experience using purchasing platforms and monitoring budgets Experience maintaining financial systems and software such as Toast POS, Fintech, Restaurant 365 Experience with extensive inventory procedures Business development and staff excellence development Ability to drive COGs down and maximize product utilization Creates value by organizing and monitoring ordering and managing variance Support Membership teams in increasing value for members Managing OSE requests and adhering to OpEx budgets Overseeing maintenance requests and beverage assets function Accountable for approving new hires and leading onboarding with guidance and feedback Creating best practices and SOPs for teams Physical Demands And Work Environment
