Overview
We are seeking a reliable and experienced Sous Chef to join our team at The Seabrook. As a Sous Chef, you will be responsible for prepping ingredients and cooking meals for our residents. The Sous Chef ensures that excellent quality of food service is provided at all times. Responsibilities
Know and understand Restaura’s Culinary Standards and Commitments Schedule and assign daily work to a culinary brigade and oversee task completion Train and guide staff on job duties, proper food safety and sanitation procedures, cooking methods, etc. Cook and prepare a variety of foods according to production guidelines and recipes Maintain excellent customer service and a positive attitude towards guests, customers, clients, co-workers, etc. Train culinary brigade on proper preparation of ingredients by measuring, weighing, mixing, chopping, trimming, and peeling Safely utilize a variety of utensils including knives and operate equipment such as ovens, stoves, slicers, mixers, etc. Maintain daily communication between day and night shifts regarding items that require additional cooking times and prep for upcoming meals Communicate issues that could affect service before and after each meal Demonstrate proper food safety and sanitation practices; store food according to policies; maintain a clean and sanitary workstation and equipment Execute meal production on time, with components ready for service; forecast and adjust production as needed Ensure servers understand correct portions when cutting, preparing, and serving items Lead, supervise, and provide feedback to the culinary team; assist with staff scheduling and addressing employee relations as needed Qualifications
Previous experience as a supervisor in a related role preferred; experience as a cook or in a related role required Ability to work independently with limited supervision Knowledge of basic food preparation principles, various cooking methods, and food safety regulations (handling, sanitation, and storage) Must be able to obtain food safety certification; ServSafe Certified Demonstrates basic math and counting skills Strong interpersonal and communication skills, both written and verbal Occasional lifting/carrying/pushing/pulling up to 25 lbs Culinary training or degree FLSA: This is a salaried exempt role.
