Responsibilities

Responsible for supporting the VP of Food and Beverage in all aspects of food beverage quality, cost control, and completing inventories.

Respond to all inquiries regarding the financial performance of the food and beverage department.

Monitor and ensure that food and beverage operating procedures are met on a consistent basis.

Communicate effectively with front and back of house management and staff.

Oversees the flow of beverage service on the gaming floor and at all property bars.

Provides day to day leadership direction to the Assistant Beverage Managers, Assistant Restaurant Managers, Room Chefs, Sous Chefs, Pastry Chefs, Restaurant Leads and Beverage Leads.

Demonstrate the ability to perform the duties of all restaurants, bars and service wells.

Monitor and control labor within the department.

Maintain adequate coverage in all outlets based on business demands.

Responsible for hiring, training, evaluation, and corrective counseling of food and beverage team members.

Ensures all team members follow recipes, measurements, quantities, and other information so each item served can be duplicated consistently.

Ensure all prep items are made to approved standards.

Confirms that all opening and closing checklists are adhered to and product(s) stored and secured.

Inspects serving areas to ensure observance of safe, sanitary handling practices.

Make certain all product(s) is placed and restocked in designated areas.

Maintain a solid knowledge of all food and beverage products and ensure all products are properly rotated.

Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time.

Inspects all restaurants, bars and service areas to ensure all products are properly labeled and dated to ensure safekeeping and sanitation.

Ensures all food and beverage team members are using all cleaning equipment, chemicals, and sanitizing products in accordance with all MSDS sheets and departmental standards.

To provide BIG Service to internal and external guests and ensure their complete satisfaction, inclusive of greeting and interacting with guests in a friendly and enthusiastic manner, anticipating and meeting guest needs and preferences, remaining calm and professional when dealing with guests that are difficult or upset.

The ability to develop and maintain professional, trusting, and positive working relationships with managers, supervisors, staff, coworkers, guests, and vendors.

The ability and willingness to ensure that work activities are completed accurately, efficiently, and in a timely manner.

The ability to work safely. This includes clearly understanding and following company safety policies and procedures, completing work in a safe manner, caring about safety of self and others, responding appropriately in an emergency, and reporting unsafe conditions.

Maintain regular attendance at scheduled shift and staff meetings.

Maintain professionalism and a friendly and approachable demeanor throughout the workday.

Assist with training/mentoring of new team members as requested.

Maintain all appearance standards in accordance with established uniform and appearance guidelines.

Inform manager on duty of any irregularities and unusual situations when they occur.

Ability to keep a friendly, calm, and helpful demeanor in high-stress situations and a continuously fast-paced environment.

Is honest in all interactions and displays a high degree of integrity.

Ability to work independently with little to no supervision or as part of a team is required.

Qualifications

Minimum of 5 years previous management experience in both beverage and food service preferred.

Must complete Food and Beverage Manager assessments and achieve an 85% or higher.

High school diploma or its equivalent required.

Must be 21 years of age or older.

Must pass all required pre-screening and background checks.

Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.

Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.

Obtain Alcohol management certification through STAR prior to first day of employment.

Must be able to obtain required work cards, and non-gaming registration as required by the local jurisdiction.

Salary: $60,000 to $70,000 annually DOE
