Executive Chef

to join our team at Hotel Canandaigua located in Canandaigua, NY. This person will be responsible for planning and managing the kitchen staff in the procurement, production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment.

What does the day to day look like?

Responsible for long- and short-term planning and day-to-day operations of the kitchen and related areas.

Recommends menu and procedural changes.

Adheres to all SOPs and future food programs to ensure a consistent, quality product.

Manages Human Resources in the kitchen to attract, retain, and motivate employees while providing a safe environment, including hiring, training, development, empowerment, coaching, counseling, performance and salary reviews, problem resolution, open communication, and discipline as appropriate.

Plans and manages procurement, production, preparation, and presentation of all food in the hotel in a safe, sanitary, cost‑effective manner.

Monitors and controls maintenance and sanitation of kitchen, equipment, and related areas to maintain a healthy, safe work environment that meets or exceeds federal, state, corporate, and franchise standards and regulations.

Develops, recommends, implements, and manages the department’s budget; continually analyzes, forecasts, monitors, and controls labor and food costs to meet or exceed management/budget objectives.

Develops and implements menus and backup procedures (use records, production lists, pars, training, etc.) within corporate guidelines to continually improve revenues and profit margins while maintaining quality.

Executes and promotes safety and accident‑prevention procedures to minimize liabilities and related expenses.

Maintains a spotless kitchen at all times; the area should be completely clean at the end of each shift.

May perform any kitchen roles as needed.

Who is our Ideal Candidate?

Degree in food service or relevant experience in the F&B department.

Proficient financial management and analysis skills.

Experience in food research and design.

Development and consistent implementation of HACCP standards.

Excellent communication and interpersonal skills.

Ability to mentor junior staff.
